Un plat riche et réconfortant. Voilà ce que j’aime quand arrive le froid et l’automne. Je vous avais déjà proposé sur le blog des ribs de porc sauce barbecue, mais pas encore une version au bœuf. La cuisson est encore un peu plus longue pour avoir une viande très très tendre, mais le résultat sera délicieux et savoureux à souhait !

Pour la sauce :

  • Coupez les plats de côte en suivant les os.
  • Mettez dans une grande marmite d’eau bouillante et faites cuire sur feu doux pendant 5h… C’est long, mais ça sera bon !
  • Pour la sauce mélangez tous les ingrédients ensemble. J’ai pris des épices worcester, mais on pet mettre à la place de la sauce worcestershire.
  • Quand la viande est cuite, retirez le gras si il y en a trop puis mettez dans la sauce, dans une boite hermétique pour au moins une nuit au frais.
  • Le lendemain, versez la sauce et la viande dans un plat allant au four.
  • Recouvrez de papier aluminium puis mettez à cuire 3h dans un four préchauffé à chaleur tournante à 130°C. Là c’est tout au début.
  • Et au bout de 3h.
  • À servir avec une bonne salade ou des frites… À vous de choisir !
