Trofie au pesto de pistache, pecorino et pousses d'épinards, asperges vertes
Je prends un peu d'avance sur la saison au moment où je fais cette recette, mais quand je suis tombé sur une belle botte d'asperges, j'ai eu envie de faire ce plat. Ces délicieuses pâtes cuites al dente, avec un pesto de pousses d'épinards, pistache et pecorino, seront parfaites avec des asperges juste revenues à l'huile d'olive. Un plat lumineux qui est une invitation aux belles journées qui arrivent enfin !
Commencez par préparer le pesto épinard, pecorino pistache.
Mettez les pistaches crues, le pecorino, la gousse d'ail et l'huile d'olive dans un petit mixeur.
Mixez soigneusement.
Ajoutez les pousses d'épinard.
Mixez de nouveau pour avoir une pâte homogène.
Lavez les asperges. Coupez les en tronçons en enlevant la base trop fibreuse. Versez un peu d'huile d'olive dans une poêle sur feu soutenu. Ajoutez les morceaux d'asperge. Faites les revenir 7-8 minutes.
Voici les pâtes trofie.
Faites-les cuire une minute de moins que le temps de cuisson "al dente". Égouttez-les bien puis refroidissez-les à l'eau froide. Égouttez de nouveau.
Quand tout est prêt, versez deux bonnes cuillerées à soupe de pesto dans la crème liquide entière sur feu modéré. Salez et poivrez.
