Après le tiramisu classique et le tiramisu aux framboises, je vous propose cette nouvelle déclinaison ultra fraîche et délicieuse. Cette association de saveur est vraiment parfaite: orange, café, Grand Marnier et une touche de cacao en poudre. Plongez la cuillère dans le pot de tiramisu et vous sentirez tout de suite sa consistance crèmeuse, juste irrésistible !
Ajoutez 2 cuillerées à soupe de Grand Marnier puis trempez-y rapidement les biscuits à la cuillère.
Placez des morceaux de biscuits imbibés dans le fond des ramequins.
Mettez le blanc d’œuf dans un bol avec le sucre glace.
Montez-le en neige assez ferme.
Mettez le jaune avec le sucre semoule.
Ajoutez le zeste d’une orange non traitée.
Blanchissez le plus possible le jaune avec le sucre et le zeste (cela deviendra mousseux et orange du coup!). Ajoutez le mascarpone avec une cuillerée à coupe de Grand Marnier.
Fouettez le tout pendant 4 à 5 minutes. Au départ le mascarpone devient très souple puis monte presque comme une chantilly. Vous devez voir les traces du fouet dans la crème, c’est le signe que vous pouvez arrêter de fouetter.
Ajoutez le blanc monté en neige et incorporez-le délicatement.
Ajoutez la moitié de la crème sur les biscuits.
Ajoutez un nouvel étage de biscuits imbibés.
Puis finissez en ajoutant le reste de crème. Suivant la taille de vos ramequins, vous pourrez peut être en faire un de plus. Avec un couteau, raclez l’excédent de crème pour lisser parfaitement les tiramisu.
Placez au frais pendant au moins 3 heures avant de servir.
Au moment de déguster, ajoutez le cacao en poudre.
