Empieza cociendo tres naranjas (2 naranjas de mesa y 1 naranja sanguina) en agua hirviendo durante 1 hora. Puedes ponerle una tapa durante la cocción. Te sobrará una naranja sanguina, que luego podrás exprimir.
Las naranjas se ablandan después de este tratamiento. Deja enfriar fuera del agua.
Mientras tanto (o mientras se cuecen las naranjas), hornea el polvo de almendra a 170°C durante 16 minutos. Colorea ligeramente.
Cuando se puedan manipular las naranjas, córtalas en trozos y quítales las semillas.
Pesa 600 g e introdúcelos en una batidora con el azúcar de caña integral y los huevos.
Mezcla hasta obtener una crema suave. Viértelo en un recipiente. Exprime la última naranja sanguina. Vierte 70 g del zumo en la masa.
Vierte el aceite de coco derretido y la almendra en polvo.
Mézclalo bien y viértelo en un molde (en este caso un molde desmontable) forrado con papel sulfurizado. También puedes poner una pistola de engrasar en el borde interior.
Hornea a 175°C durante 45 minutos a fuego estático (no con ventilador).
Deja enfriar y prepara la ganache fundiendo en el microondas la nata y el chocolate negro troceado. Mézclalo bien, luego viértelo sobre el pastel y agítalo para que quede suave. También puedes golpear el molde contra la superficie de trabajo para igualarlo.
Deja enfriar y refrigera durante al menos 4 horas antes de servir. Lo mejor es comerlo fresco.
