Choisissez la plante aromatique dont vous allez réaliser l’huile. Il faudra les feuilles sans forcément les détacher, sauf si la branche est trop grosse. Sachez que 125g fait un énorme volume de feuilles ! Ici j’ai pris du basilic. Si vous en avez moins, pesez vos feuilles, il faudra alors peser le double d’huile tout simplement.
Préparez un bol rempli d’eau glacée avec des glaçons.
Et faites bouillir une casserole d’eau salée à 20g par litre. Quand l’eau bout, faites blanchir les feuilles 30 secondes.
Dès les 30 secondes écoulées, récupérez les feuilles et placez-les dans l’eau glacée.
Quasiment instantanément, les feuilles sont très froides. Mettez-les alors dans du papier absorbant. Il faut enlever le maximum d’eau. Changer de temps en temps le papier et pressez les feuilles pour bien absorber toute l’eau. On peut même mettre les feuilles dans du papier absorbant, mettre le tout dans un sac, puis sous vide si vous avez la machine pour cela. Sinon, le papier absorbant seul fera l’affaire.
Le gros volume de feuille a drastiquement diminué.
Versez le tout avec l’huile et mettez dans un petit blender ou un blender classique.
Mettez à vitesse maximum pendant 4 minutes. Au début le tout blanchit et c’est normal.
Au bout des 4 minutes, l’huile est beaucoup plus foncée et a pas mal chauffé.
Laissez l’huile dans le blender pendant au moins 2-3 heures. Après ce temps, mettez un passe-thé très fin au dessus d’un verre ou d’un récipient et versez le contenu du blender.
Laissez l’huile s’égoutter doucement et jetez le reste du passe-thé après avoir un peu écraser à la cuillère pour faire sortir le maximum d’huile.Versez dans un petit contenant bien fermé (ce n’est pas le cas sur la photo) et gardez au frais jusqu’à utilisation.
