Primero cuece las patatas con piel en el horno a 190°C durante 50 minutos. Necesitas patatas con pulpa harinosa. Es la mejor manera de asegurarse de que la pulpa de la patata esté completamente seca al final de la cocción. Sobre todo, ¡no los hiervas!Para obtener 500 g de pulpa pelada, necesitarás al menos 750 g de patatas crudas con piel.
Lava y centrifuga bien las hojas de espinaca. Ponlas en una batidora pequeña con 1/4 de cucharadita de sal y una o dos cucharadas de aceite de oliva. La sal y el aceite ayudarán a triturarlo todo junto.

Hay dos opciones para hacer los ñoquis. En primer lugar, la tablita de madera. Pesa las bolas de 10 g y hazlas rodar con el pulgar sobre la pequeña tabla enharinada.
Por supuesto, también puedes utilizar un tenedor en lugar de la pequeña tabla para ñoquis. También puedes enrollar la masa en forma de salchicha y cortarla en trozos.
Lo ideal es dejar secar un poco los ñoquis al aire antes de cocinarlos. Para cocerlos, ponlos en agua hirviendo con sal y cuando suban a la superficie, ¡están listos!
