Commencez par laver le riz à sushi. Rincez-le puis égouttez-le. Mettez-le dans un rice cooker ou une casserole.
Versez l’eau (415g) et mettez en route.
Pendant ce temps, mélangez le sucre, le mirin, le vinaigre et le sel dans un bol.
Quand le riz est cuit, débranchez le rice cooker sans le couvercle. Laissez tiédir un peu puis versez-le dans un récipient. Versez progressivement la sauce vinaigrée. Ne mettez pas tout ! Mélangez sans écraser les grains de riz, il faut faire bien attention.
Je mets environ les 3/4 de la sauce et je garde le reste pour une fois suivante. Mais si vous préférez plus vinaigré, alors ajoutez-en davantage !
Voici le furikake, un condiment japonais pour le riz. Vous le trouverez en épicerie japonaise, en épicerie asiatique plus générale et aussi en ligne. Il en existe tout un tas de sortes.
J’assaisonne le riz avec une bonne cuillerée à soupe. Mélangez soigneusement.
Préparez le thon. Émiettez les 140g de thon égoutté à la fourchette.
Mettez les sauces et mélangez bien.
Mettez une première couche de riz dans le moule à onigiri, en faisant une sorte de cavité.
Ajoutez environ 20g de thon par onigiri. Replacez du riz. Il doit au moins y avoir 6mm de riz au dessus du thon.
Mettez le petit couvercle, pressez, puis démoulez délicatement.
Faites chauffer une poêle avec un peu d’huile (pas trop car le riz peut se désolidariser…) puis faites griller les onigiri juqu’à avoir une couleur ambrée.
Passez un coup de pinceau de sauce de soja claire sur les deux côtés, puis appliquez une feuille d’algue coupée à la bonne dimension.
Il ne reste plus qu’à déguster avec de la sauce de soja !
