Après avoir réalisé près de deux kilos de nougat, je me suis dit que la crème glacée était une suite logique. Je vous propose comme d’habitude ma version de cette crème glacée. Des petits morceaux de pistaches et d’amandes grillées viennent agrémenter cette glace au bon goût de miel.
Commencer par « éplucher » le nougat si il a une feuille de pain azyme. Comme j’utilise dans cette recette du nougat fait maison, voir recette ici, j’avais donc bien mis cette feuille dont je me débarrasse ici.
Couper ensuite le nougat en morceaux grossiers.
Mettre le nougat avec le lait, la poudre de lait dans une casserole. Laisser chauffer pour faire fondre le nougat puis quand le lait bout, arrêter la cuisson.
Mélanger dans un bol, les jaunes, le super neutrose et le miel sans forcément blanchir les jaunes.
Verser le lait encore très chaud et bien mélanger avec un fouet.
Cuire comme une crème anglaise en allant jusqu’à 85-86°C.
Hors du feu, ajouter la crème liquide entière.
Laisser refroidir et laisser « maturer » une nuit au frais en mélangeant de temps en temps (sauf quand on dort!).Le jour même, re-fouetter la crème pour enlever et dissoudre la peau en surface.
Turbiner.
Puis mettre en pot au congélateur au moins 3 heures avant de déguster!
