Mettez tout d’abord les blanc de poulet à cuire dans de l’eau bouillante pendant 15 minutes.
Égouttez-les puis laissez-les entièrement refroidir. Vous pouvez même les préparer la veille et les mettre au frais la nuit.
Mettez la viande dans un mixeur (vous pouvez également effilocher à la fourchette).
Quand la viande est mixée, mettez-la dans un récipient avec la crème, la mayonnaise et la poudre de curry. Salez à votre goût.
Mélangez bien puis ajoutez les raisins secs.
Lavez les branches de céleri, coupez les feuilles puis coupez les branches en morceaux. Mettez dans le poulet.
Au moment de préparer les rouleaux, coupez la pomme verte en quartiers, puis coupez chaque quartier en 6 tranches plus fines. Mettez au besoin un peu de citron pour empêcher l’oxydation.
Prenez une galette de riz, trempez-la entièrement dans de l’eau froide (je la passe sous le robinet des deux cotés.
Posez-la sur un torchon légèrement humide (trop sec, ça colle direct !), ou mieux, une galette en plastique trouée prévue à cet effet, elle-même posée sur un torchon. Ce sont des galettes en plastique vendues dans cet objectif unique, on les trouve en boutique asiatique ou sur internet.
Quand la galette de riz a bien absorbé l’eau, posez au centre vers le bas, une ou deux feuilles de sucrine, et deux fines tranches de pomme verte.
Versez deux cuillerées à soupe de salade de poulet curry, ajoutez des tranches d’avocat, parsemez de noix de cajou.
Ajoutez quelques pousses et des feuilles de coriandre, puis enroulez par le bas, pliez les côtés vers le centre, puis terminez en roulant à nouveau.
Faites de même pour tous les rouleaux.
Si vous ne les mangez pas directement, mettez-les individuellement dans du film étirable. Au bout de 5-6 heures, ils seront déjà un peu moins bons, la pâte séchant malgré le film étirable (mais beaucoup moins que sans !). Vous pouvez ajouter la sauce de votre choix, mais personnellement je trouve qu’ils se suffisent à eux-mêmes !
