Faites tout d’abord cuire les pommes de terre avec leur peau, au four à 190°C pendant 50 minutes. Il faut des pommes de terre à chair farineuse. C’est le meilleur moyen pour avoir une chair de pomme de terre bien sèche en fin de cuisson. Ne les faites surtout pas cuire à l’eau !Pour avoir 500g de chair épluchée, il vous faudra au moins 750g de pommes de terre crues avec la peau.
Lavez et essorez parfaitement les feuilles d’épinard. Mettez-les dans un petit blender avec 1/4 de cuillerée à café de sel et une ou deux cuillerées à soupe d’huile d’olive. Le sel et l’huile vont aider à broyer le tout.
Il faut que le tout devienne une purée homogène.
Épluchez les pommes de terre tiédies, pesez-en 500g et coupez-les en morceaux.
Écrasez au presse-purée (je ne sais plus où est le mien !) ou à la fourchette, ce qui demande un peu plus de travail.
Versez la purée d’épinard et mélangez le tout.
Versez ensuite les flocons de pomme de terre et 100g de farine. Les flocons de pomme de terre (c’est en gros la purée en sachet, mais sans rien d’autre que de la pomme de terre déshydratée) va assécher la pâte. Mélangez de nouveau.
Travaillez ensuite la pâte sur un plan de travail fariné, puis ajoutez le reste de farine (voire davantage) jusqu’à ce que la pâte ne colle presque plus aux doigts.
Pour faire les gnocchis, deux options. Tout d’abord la petite planche en bois. Pesez des boulettes de 10g, puis roulez la boulette avec le pouce sur la petite planche farinée.
Vous pouvez aussi bien sûr utiliser une fourchette à la place de la petite planche à gnocchi. Sinon il reste l’option de rouler la pâte en boudin, puis de couper le tout en morceaux !
L’idéal est ensuite de laisser les gnocchis sécher un peu à l’air libre avant de les cuire. Pour la cuisson, dans de l’eau bouillante salée et quand il remontent à la surface, c’est que c’est bon !
