Préparez la crème. Mettez le cream cheese, le sucre glace, la vanille liquide dans une récipient. Ajoutez les zestes : 1/2 citron vert, 1 orange, 1cm de gingembre. Mélangez bien.
Avec une cuillère à glace, faites 9 boules. Elles sont très molles à ce stade. Aplatissez un peu le dessus (cela ne doit pas être aussi bombé que sur la photo, il vaut mieux que cela ait la forme d’un palet que d’une demi-boule), puis mettez au congélateur deux trois heures, le temps que le cream cheese se congèle.
Pendant ce temps, préparez la pâte. Mettez le beurre demi-sel, la vergeoise brune, le sucre et la vanille liquide dans un récipient ou dans le bol de votre robot. Ajoutez les épices : cannelle, gingembre et 4 épices.
Mélangez (avec la feuille pour un robot) jusqu’à obtenir une consistance homogène. Ajoutez l’œuf puis mélangez de nouveau. Versez la farine et la poudre d’amande.
Mélangez pour avoir une pâte homogène. Pesez une boule de 65g.
Aplatissez-la en un disque, puis placez une palet (moins bombé que sur la photo !) de crème congelée.
Refermez la pâte autour de la crème.
Faites de même pour le reste de la pâte qui devrait donc se diviser en 9 avec les 65g par cookie.
Préparez le sucre qui ajoutera surtout une saveur de cannelle. Mélangez le sucre et la cannelle en poudre.
Roulez les cookies dedans puis posez-les sur deux plaques à pâtisserie garnies de papier sulfurisé.
Important : Laissez les cookies à température ambiante pendant 1h30, le temps que la crème interne décongèle.
Faites ensuite cuire les cookies 20 minutes à 170°C. C’est un peu plus que d’habitude, car si on reste en sous-cuisson, la crème va humidifier la pâte. Ne vous inquiétez pas, ils seront quand même bien moelleux à cœur, grâce à la garniture ! À la sortie du four, tournez un cercle autour de la pâte pour les re-rendre bien circulaires.
