Pour la courge butternut, faites comme dans la recette de mes raviolis à la courge. Il faut la peler, la vider et la couper en morceaux. Arrosez d’huile d’olive, salez et poivrez puis mettez au four 1h à 1h20 à 190°C sur chaleur tournante. Tout est expliqué ICI ! Pour les châtaignes en conserve, vous les ferez chauffer à la poêle avec un bon gros morceau de beurre, salez et poivrez à votre goût.Pour la polenta crémeuse, mettez l’échalote épluchée et finement hachée dans une casserole sur feu modéré avec le beurre demi-sel.
Laissez joliment colorer puis versez le vin blanc. Quand le vin blanc s’évapore, versez le bouillon de volaille et le lait.
Prenez de la semoule de maïs pour polenta. En générale elle est vendue sèche, mais précuite.
Versez la semoule en pluie tout en mélangeant au fouet.
Quand la polenta bout, ajoutez le parmesan râpé, la crème épaisse et la crème de truffe.
Versez également la ciboulette finement hachée. Mélangez, c’est déjà terminé.
J’ai pris ici des filets de bar, sans arrête ni écaille. Vérifiez tout de même l’absence d’arrête en passant le doigt. Retirez-les au besoin avec une pince à arrête ou même une pince à épiler propre.
Versez un bon gros morceau de beurre demi-sel dans une poêle et faites chauffer sur feu fort.
Posez d’abord les filets côté peau.
Salez et poivrez et comptez 1 minute 15 à 1 minute 30 puis retournez-les, toujours sur feu fort. Vous pouvez arroser avec le beurre qui crépite. Comptez de nouveau 1 minute 15 de cuisson pour l’autre face.
C’est terminé. J’ai retourné pour montrer la coloration, mais ne laissez pas le poisson dans la poêle chaude, il risquerait de trop cuire !
Servez les assiettes avec la polenta, le bar poêlé, avec des morceaux de courge butternut et des châtaignes. Pour un plat encore plus chic et festif, quelques fines tranches de truffe sur le bar.
