Purée de pommes de terre à l'ail rôti, beurre noisette et thym
Deuxième recette en collaboration avec lespommesdeterre.com ! Cette fois je vous propose une recette de purée au beurre noisette, ail rôti et thym, servie avec un poulet cuit au four, avec oignons et paprika. Un délice qui embaume la maison de son alléchante odeur ! En plus de la recette en pas à pas, je vous mets aussi la vidéo en replay du facebook live du mercredi 21 octobre !
Préparez tout d’abord le poulet : placez les hauts de cuisses dans un plat allant au four. Badigeonnez-les d’huile d’olive puis parsemez de paprika.
Épluchez et coupez les oignons en quatre. Découpez le haut des têtes d’ail et placez le tout dans le plat.
Versez de l’huile d’olive sur les oignons et l’ail, salez et poivrez à votre goût, parsemez de thym. Mettez à cuire 50 minutes à 1 heure dans un four préchauffé à 190°C sur chaleur tournante. Vous pouvez retourner à mi-cuisson et arrosez d’un peu d’eau.
Pour la purée : lavez les pommes de terre puis coupez-les en morceaux.
Placez-les dans une casserole avec de l’eau froide, suffisamment pour les recouvrir. Salez, couvrez puis portez à ébullition. Comptez 20 minutes de cuisson à partir de l’ébullition. Pour vérifier la cuisson, plantez une fourchette dans un morceau de pomme de terre.
Égouttez-les.
Ajoutez le lait ou la crème. On peut aussi ajouter un peu d’huile d’olive !
Placez le beurre dans une petite casserole puis faites-le cuire pour lui donner une couleur caramel, pas trop foncée.
Versez le beurre noisette dans les pommes de terre. Écrasez le tout à la fourchette, la peau des pommes de terre reste.
Quand le poulet est cuit, mettez les gousses d’ail cuites de deux têtes dans la purée, en les écrasant bien à la fourchette pour les disperser. Parsemez la purée de thym, salez et poivrez à votre goût.
Servez la purée bien chaude avec le poulet, des morceaux d’oignons et des gousses d’ail de la tête restante. Bon appétit !
