Parmentier de Boudin Noir aux Pommes et aux Oignons Caramélisés
Cauchemardesque pour certains, délicieux pour d’autres, le boudin noir laisse rarement indifférent. Je fais partie de ceux qui adorent ça ! Mais alors vraiment ! Même si je sais de quoi c’est fait. Pas très glamour à prendre en photo, ce parmentier est cependant parfait: les pommes revenues dans du beurre, des oignons caramélisés, une purée maison et le boudin noir fermier. Le tout avec un bon verre de vin rouge et une salade verte et le moral est au beau fixe !!
Préparez tout d’abord la purée. Épluchez vos pommes de terre et faites les cuire 20 à 30 minutes à l’eau (ou même à la vapeur). Il suffira de vérifier la cuisson en plantant une fourchette dans une grosse pomme de terre. Elle doit pouvoir y rentrer facilement.
Égouttez les pommes de terre puis remettez-les dans la casserole. Écrasez-les en purée. Je préfère la purée avec des grumeaux, c’est tellement bon !
Ajoutez le sel, le poivre, la noix de muscade, le beurre demi-sel.
Ajoutez le sucre, le sel, le poivre. Laissez-les caraméliser sur feu assez vif. Dès que la couleur devient trop prononcée, ajoutez un peu d’eau.
L’eau va disperser les sucs dans tous les oignons. Laissez cuire jusqu’à avoir une belle couleur et que les oignons soient bien cuits.
Épluchez et videz les pommes. Coupez en fines tranches.
Faites les colorer rapidement sans trop les abimer. Elles cuiront plus au four.
Préparez votre boudin noir.
Épluchez le et écrasez-le à la fourchette ou à la main.
Remplissez maintenant votre plat. Mettez une couche de pommes poêlées.
Mettez ensuite le boudin (ici je remplis un petit plat car j’en ai fait deux) puis les oignons caramélisés.
Finissez avec la purée de pommes de terre.
C’est prêt à passer au four !
Faites cuire jusqu’à ce que le dessus commence à prendre une belle couleur puis dégustez avec une salade verte et un bon verre de vin rouge !
