Tamisez la poudre d'amandes et le sucre glace pour réaliser un "tant pour tant". Mettez dans un récipient les 60g de blancs d'oeuf et les épices à pain d'épices
Préparez la meringue italienne en portant l'eau et le sucre semoule à 118°C.Montez les blancs en neige pas trop fermes.Versez en filet le sirop de sucre cuit. Continuez de fouetter jusqu'à ce que la température retombe à 55°C.
Ajoutez petit à petit la meringue au mélange "tant pour tant" blancs. Faites retomber l'appareil en le "macaronant" pour obtenir une pâte lisse, souple et brillante. Mettez l'appareil en poche et formez les coque de 3,5 centimètres de diamètres. Tapotez la plaque pour aplanir les macarons.
Faites cuire à 140°C pendant 16 minutes, puis laissez refroidir sur la plaque chaude pendant la cuisson de la seconde fournée. Roulez le foie gras en un long boudin de même diamètre que les macarons. Laissez le refroidir suffisamment pour pouvoir couper en tranches.
Garnissez les macarons avec une tranche de foie gras, puis d'un peu de chutney de figues. Mettez un peu de fleur de sel puis couvrez avec un deuxième macaron. On peut tout à fait ne mettre qu'un seul macaron au lieu de deux.
Contrairement aux macarons sucrés, ceux-ci peuvent être consommés le jour même ! Bonne dégustation !
