Je suis un vrai adepte de ces « hot dogs » aux crevettes ou au homard que l’on voit aux États-Unis et de plus en plus par chez nous. Alors je vous propose les deux versions, car celle au homard revient assez cher. Avec le bun très moelleux, c’est un délice total !! Un peu de citron et de céleri pour parfaire le tout, et le tour est joué !
Pour cette recette, j’avais pris un homard cru congelés, c’est ce que j’avais sous la main au plus simple.
Dans ce cas, pour 4 personnes, il vous en faudra 2. Mais coupez-les en morceaux puis faites-les sauter 6 minutes à la poêle sur feu modéré dans du beurre demi-sel.
Quand ils sont cuits, ou que les crevettes sont cuite (pour les crevettes, il suffit de les cuire à l’eau !), préparez la sauce. Mettez l’œuf, la moutarde et l’huile dans un récipient à mixeur plongeant.
Mixez en partant du bas puis en remontant doucement vers le haut.
Ajoutez alors le jus de citron, la crème, salez et poivrez à votre goût. Coupez très finement 15cm d’une branche de céleri sans les feuilles.
Ajoutez dans les crevettes ou le homard.
Vous pouvez ajouter un peu de jus de citron supplémentaire à votre goût.
Pareil pour la version luxe au homard ! Ajoutez ensuite deux-trois cuillerées à soupe de sauce, en en ajoutant au besoin. C’est à vous de voir à quel point vous voulez être généreux avec la sauce.
Quand tout est prêt, tartinez de beurre demi-sel les deux faces des hot dogs puis faites-les réchauffer à la poêle sur feu modéré pour qu’ils soient bien dorés.
Hop ! Si vous avez fait la version yudane (ICI), ils vont retrouver tout leur moelleux !
Quand ils sont chauds, coupez-les au centre sans aller jusqu’au fond, mettez une petite couche de sauce à l’intérieur, puis remplissez-les avec les crevettes ou le homard. Un peu de ciboulette et c’est prêt ! J’ai mis de la salade pour la photo, mais je trouve que ça tue le goût délicat du homard. À vous de voir !
