J’étais au Maroc la semaine dernière et je suis revenu avec plein de nouvelles recettes. Je vous propose ces harchas originales, farcies à la tapenade express maison. Un délice pour l’apéritif !! Les harchas sont des galettes de semoule de blé dur très consommées dans tout le Maghreb. Cette version à la tapenade m’a été donné par mon amie Lala Meryem, et Bouchra. Je les remercie encore chaleureusement d’avoir accepté de partager avec nous ici cette délicieuse recette ! Vous pourrez les cuire à la poêle, ou même au four.
Préparez tout d’abord la tapenade.Mettez dans un récipient ou un mixeur, les olives, l’ail, le persil et l’huile d’olive.
Vous pouvez y ajouter des anchois !
Mixez pour avoir une tapenade pas trop fine.
Goûtez, c’est déjà délicieux !
Versez la semoule fine dans un récipient.
Faites fondre le beurre.
Versez l’huile et le beurre fondu dans la semoule.
Ajoutez le sel et mélangez le tout à la main pour bien imprégner la semoule de matière grasse.
Mettez de côté 175g de ce mélange dans un récipient à part. Cela nous servira pour la suite. Versez la levure chimique dans le reste de la semoule (pas les 175g !).
Versez alors l’eau et le lait.
Mélangez puis laissez la semoule absorber le liquide une vingtaine de minutes.
Prélevez une boule grosse comme un œuf. Faites une cavité au centre.
Placez de la tapenade.
Puis refermez soigneusement.
Prélevez un peu de semoule mise de côté.
Et saupoudrez la surface de la boule.
Placez la boule dans une poêle chaude et aplatissez-la à la main pour en faire un petit disque.
Faites de même pour la suite des ingrédients. Retournez les galettes quand elles commencent à dorer.
Et voilà !!
Vous pouvez aussi mettre les boules non aplaties au four à 180°C pendant 20-25 minutes.
Les harchas seront encore plus croustillantes.
Je vous garantie que vous aurez du succès à l’apéritif !! Faites-les réchauffer au besoin 10-15 minutes au four à 165°C. Vous retrouverez alors le délicieux croustillant.
