Allez, encore une autre recette de cookies vous me direz !! Et oui ! Mais je n’arrive à résister à tester de nouvelles proportions… Et puis avec la Saint Valentin qui arrive, je me suis dit qu’il était temps d’utiliser mon kitschissime moule en forme de cœur !! Alors baissez l’éclairage, allumez les chandelles, mettez du Barry White et enfilez votre tablier pour préparer ces « cocochocolove » cookies ! Leur particularité?? Ils sont irrésistibles… Oui certes, mais encore? J’ai mis des pistoles Valrhona en guise de pépites et de la noix de coco séchée et grillée pour leur donner une texture inimitable… Avec qui partagerez-vous ce cœur fondant??
Préchauffez votre four à 180°C. Versez la noix de coco séchée râpée (non sucrée) sur une plaque à pâtisserie recouverte de papier sulfurisé.
Enfournez et laissez cuire en mélangeant de temps en temps pendant 10 à 12 minutes jusqu’à obtenir une noix de coco bien dorée. Laissez refroidir.
Dans un grand récipient, mettez le sucre semoule, le sel, la vergeoise, le beurre mou.
Mélangez le tout avec une cuillère ou le « k » de votre robot.
Ajoutez la vanille liquide et l’œuf.
Mélangez pour obtenir une crème homogène.
Ajoutez la noix de coco grillée et refroidie.
Dans un bol, mélangez le bicarbonate de sodium et la farine.
Ajoutez dans le récipient et mélangez.
Ajoutez enfin les pistoles de chocolat. J’ai pris ici du Valrhona Manjari dont l’acidité se marie à la perfection avec la noix de coco.
Mélangez avec le « k » du robot ou à la main.
Si vous avez un « cercle » en forme de cœur, graissez-le avec du beurre ou de la bombe de démoulage puis posez-le sur une plaque à pâtisserie couverte de papier sulfurisé. Remplissez le fond sur 7-8mm d’épaisseur.
Faites cuire une vingtaine de minutes pour un gros format.
Décerclez puis transvasez sur une grille à pâtisserie.
Pour les cookies classiques, formez des boules de 50 à 60g en les espaçant suffisamment.
Faites les cuire 10 à 12 minutes. Ils sortiront relativement gonflés puis retomberont 5 minutes plus tard.
L’essentiel surtout est de ne pas trop cuire la pâte ! C’est là que c’est le meilleur. Dégustez-les tièdes, c’est à ce moment qu’ils sont au top de leur forme et que le chocolat est encore fondu mais plus brûlant !
