Je continue de m’amuser à créer des recettes pour mon partenaire Alvalle (deux recettes jusqu’à fin août!) ! Imaginez des petits choux feuilletés, garnis d’une farce au chorizo piquant et d’un pesto rouge, doux et suave, aux tomates séchées et noix de cajou grillées! Un mélange piquant et délicieux, servi dans de la pâte feuilletée croustillante. Une combinaison parfaite que va souligner notre Soupe Froide aux tomates et aromates Alvalle. Chaud-froid, piquant-doux, croustillant-moelleux, cette recette va réveiller les papilles de tous les gourmands comme moi!
Pour cette recette, nul besoin de s’embêter avec une pâte feuilletée « maison »! Un rouleau du commerce (de bonne qualité, « pur beurre »!!). Si vraiment on veut être puriste, ma recette est ICI!! Il suffit de couper avec un emporte-pièces de la taille choisie, 4-5cm ou même 2! Ensuite il couper en appuyant bien fort et en tournant dans la pâte feuilletée pour sceller les bords des futurs petits choux, comme si l’on y vissait le cercle!
Piquer la pâte légèrement.
Cuire 13 à 15 minutes à 190°C. Les choux sont bien gonflés au milieu et scellés sur le bord, tout cela grâce à notre technique!!
Préparer la farce: mettre l’huile à chauffer dans une poêle. Ajouter l’oignon haché.
Ajouter la tomate épluchée, épépinée et coupée en morceaux.
Ajouter un peu d’eau qui va aider à la cuisson (peu importe la quantité, l’eau va s’évaporer, mais pas un litre non plus!! 50g peut être!).
Ajouter le concentré de tomates.
Couper les tomates séchées (marinées à l’huile d’olive).
L’ajouter à la cuisson.
Mettre les noix de cajou avec un peu d’eau (50g) dans un petit mixeur et réduire en purée.
Ajouter cette « crème » de cajou au mélange.
Bien mélanger et poursuivre la cuisson sur feu doux.
Éplucher la peau du chorizo et couper la quantité (120g ou plus!) en petits morceaux.
Ajouter le chorizo.
Cuire jusqu’à ce que la farce soit épaisse. Goûter pour vérifier l’assaisonnement.
Garnir les petits choux feuilletés coupés dans l’épaisseur et servir avec un verre de soupe froide tomates et aromates Alvalle!
