Tout d’abord il vaut mieux revoir la méthode du tempérage du chocolat en cliquant ici. Je rappelle que je ne donne que des bases pour obtenir un beau chocolat à la maison avec la méthode mycryo. Je pense que cette méthode est accessible à tous alors que le vrai tempérage, le tablage (etc…) sont vraiment du domaine des chocolatiers. Chez nous, ni laboratoire, ni cuve de tempérage, juste un bol et de la poudre magique!
Mettre une première couche de couverture lait dans les moules choisis (nettoyés avec un coton) avec un pinceau. Si on décide de ne pas mettre le chocolat au pinceau et plutôt à la louche, il faut renverser le moule à l’envers au-dessus d’un papier sulfurisé pour enlever l’excédent! Quand le chocolat cristallise, appliquer une deuxième couche.
Racler avec un couteau ou un couteau à chocolat, l’excédent de chocolat pour avoir des bords nets.
Préparer le fourrage. Si l’on n’a pas de beurre de cacao (qui n’est pas le même que mycryo) on peut très bien faire une recette plus simple de gianduja (100g de pâte de noisettes pour 100g de chocolat).Faire fondre le beurre de cacao, la couverture et la pâte de noisettes.
Mettre une petite quantité de gianduja (quand celui-ci est à température ambiante) au fond des coques de chocolat. Mettre une noisette dans chaque coque .Mettre une deuxième couche de gianduja jusqu’à 1mm du bord. Laisser cristalliser, puis appliquer une couche de couverture lait. Quand le chocolat commence à cristalliser, racler le surplus avec un couteau à chocolat ou un couteau classique.
Laisser parfaitement cristalliser pendant au moins 1 heure. Renverser la plaque en polycarbonate et récupérer les bonbons au chocolat avec des gants en latex. Laisser maturer au moins deux ou trois jours avant de consommer!
