Un joli cake de saison à la couleur naturelle du potiron. Ce gâteau est parfait pour le goûter. Il est moelleux à souhait et irrésistible grâce aux noix de pécan. J’y mets un peu d’huile de noix, de beurre salé et un soupçon de cannelle. Comme toujours depuis deux ans sur mon blog, je préconise une cuisson très douce et une dégustation le lendemain après une nuit au frais.
Pour avoir 250g de chair cuite de potiron, prenez 400g de chair crue avec la peau. Vous en peut être un peu plus, mais vous pourrez mettre l’excédent à mixer dans une soupe.
Faites cuire le potiron à la vapeur pendant 15-20 minutes. Un couteau doit y rentrer facilement.
Pesez cette fois les 250g nécessaires. Mixez-les finement.
Ajoutez les œufs, l’huile de noix et le beurre demi-sel fondu.
Ajoutez également le sucre et la cannelle.
Mélangez bien puis versez la farine et la levure. 6g de levure chimique suffisent.
Versez les noix de pécan et mélangez bien.
C’est fini !
Versez la pâte dans un moule à cake chemisé de papier sulfurisé.
Faites cuire à 150°C pendant 55 minutes, puis 30 minutes à 130°C avec de la vapeur si vous avez la possibilité. Sinon pour les dernières trente minutes, versez de l’eau bouillante dans un plat à gratin dans le bas du four. Le cake a joliment gonflé !
Laissez-le refroidir complètement, puis emballez-le dans un film étirable. Placez-le au réfrigérateur la nuit avant de le déguster.
