« Australian and New Zealand Army Corps »… Voilà ce que veut dire « Anzac » ! Mais quel rapport avec ces délicieux sablés?! C’est simple, pendant la première guerre mondiale, les femmes de ces combattants leur préparaient des gâteaux riches en énergie et qui se conservent très longtemps. Mais c’était au départ des gâteaux, pas encore des sablés. Inspirés très probablement des gâteaux à base de flocons d’avoine venant d’Angleterre, les flapjacks (ma recette ICI), le lien entre ces sablés et le nom de Anzac ne s’est fait qu’un peu plus tard. Dans tous les cas, si vous allez en Australie ou en Nouvelle Zélande, vous ne pourrez pas passer à côté de ces gâteaux tellement bons ! Du beurre, des flocons d’avoine, de la noix de coco, du golden syrup, tout est réuni pour n’avoir envie d’en faire qu’une bouchée !!
Préchauffez votre four à 180°C. Mettez le sucre semoule, le bicarbonate de sodium, la farine, la noix de coco séchée râpée et les flocons d’avoine dans un bol et mélangez-les.
Voici le Golden Syrup que vous pouvez bien sûr remplacer par du miel, mais son goût est tout de fois inimitable !
Placez le beurre et le beurre demi-sel dans une casserole avec le golden syrup.
Portez à frémissement sur feu doux.
Versez le liquide chaud sur le mélange sec.
Ajoutez les 15g (ml) d’eau. Note de Bernard: Certaines recettes préconisent de mettre beaucoup plus de bicarbonate et de le mélanger avec de l’eau bouillante. Je ne le fais jamais et cela fonctionne parfaitement.
Mélangez à la cuillère ou à la main au besoin.
Pour faire des biscuits « anzac » réguliers, j’utilise pour cela ma cuillère à glace remplie à ras. Placez des boules de pâte sur un papier sulfurisé suffisamment espacées.
Écrasez doucement avec la paume de votre main chaque boulette en gardant une certaine épaisseur.
Enfournez et laissez cuire les « anzac » entre 12 et 15 minutes. Plus les biscuits seront dorés, plus ils seront croustillants. Tout dépend de ce que vous préférez: épais ou fins, croustillants ou encore un peu moelleux….!
Moi je les adore bien croustillants…!!
Laissez les « anzac » refroidir sur une grille à pâtisserie puis mettez-les dans une boite hermétique.
Vous pourrez les conserver très longtemps… Sauf si vous les croisez du regard !
