Je suis en moment très raisonnable dans mes recettes postées pour que je puisse me lâcher une fois de temps en temps ! Avant de vous révéler le sujet de mon prochain livre qui sort le 8 octobre chez Flammarion, je partage avec vous ma recette de cookies au chocolat au lait, noix, fleur de sel et dulce de leche (ou de confiture de lait). Une petite bombe délicieuse qui mettra du baume au cœur en cette rentrée, pour affronter une nouvelle année qui s'annonce devant chacun d'entre nous ! Une recette ultra simple et bien réconfortante comme il faut.
Placez le beurre demi-sel et la vergeoise brune et l’extrait de vanille liquide dans un récipient ou dans la cuve de votre robot muni de la feuille.
Mélangez bien jusqu’à avoir une crème, puis ajoutez l’œuf et mélangez de nouveau.
Versez ensuite, puis versez la farine et le bicarbonate.
Mélangez et terminez avec le chocolat au lait (ici une tablette dont j’ai simplement coupé en deux chaque carré) et les noix concassées.
Un dernier mélange et c’est tout.
Si la pâte est trop molle, placez au frais 15 à 30 minutes. Pesez ensuite des boulettes de 65g et placez-en 6 par plaque à pâtisserie garnie de papier sulfurisé. Vous remarquerez que j’ai mis un peu de fleur de sel sur le dessus, mais je n’étais pas sûr au départ de mettre une couche de confiture de lait. Vous pourrez donc mettre le sel à la toute fin au lieu de le placer comme ici avant cuisson !
Faites cuire 10 à 12 minutes à 175°C sur chaleur tournante. Le cookie ne doit pas être trop cuit à l’intérieur.
Terminez avec une bonne cuillerée à café de confiture de lait ou de dulce de leche et d’une pointe de fleur de sel.
