Como devem saber, faço semanalmente a minha vida de facebook desde Setembro. Pode encontrar todos os vídeos AQUI! Esta semana fiz para si o meu cheesecake de mármore caramelizado com manteiga salgada. E aqui está numa receita clássica passo-a-passo. Posso garantir-lhe que vai gostar se gostar deste estilo de bolo muito cremoso! Simples de fazer, basta fazê-lo na noite anterior para que possa passar a noite sentado no frigorífico!
Ingredientes para um cheesecake de 22cm de diâmetro:
210g de bolachas digestivas
25g de açúcar
100g de manteiga semi-salgada
900g de creme de queijo
125g de açúcar
35g de farinha
1 colher de chá de extracto líquido de baunilha
2 ovos
1 amarelo
235g de creme duplo
125g de molho de caramelo de manteiga com sal (receita AQUI)
Um ponto importante antes de começarmos:
Os ingredientes devem estar à temperatura ambiente (especialmente o queijo creme) para evitar grumos.
Este é o queijo creme. Em França, a marca Philadelphia é a principal, mas desde que seja um queijo creme com um teor de gordura não reduzido, é bom!
E aqui estão os digestivos que podem agora ser encontrados muito facilmente nos supermercados . Também pode levar outras bolachas!
Comece por pré-aquecer o forno a 180°C e colocar os biscoitos digestivos numa tigela grande.
Triture-os à mão ou coloque-os num liquidificador! Acrescentar o açúcar.
E a manteiga semi-salgada derretida.
Misturar bem.
Colocar uma folha de papel vegetal numa lata de bolo de borda solta com 22cm de diâmetro. Basta abrir o molde, colocar a folha e depois fechá-la para a cunhar.
Verter a massa em pó para a frigideira.
Em seguida, pressionar bem com a parte de trás de uma colher.
Cozer durante 10-15 minutos.
Em seguida, preparar o creme de cheesecake. Colocar o queijo creme à temperatura ambiente num processador de alimentos ou numa tigela. O princípio é de não “bater em demasia” o creme.
Comece a misturar a baixa velocidade para dar uma textura cremosa e para evitar caroços. Pode ser deixado a funcionar durante 2 minutos.
Adicionar o açúcar e a farinha e misturar bem.
Verter a baunilha líquida.
Acrescentar os ovos inteiros e a gema.
Terminar com as natas pesadas.
O creme deve ser suave.
Separar o creme em dois. Verter metade do creme para um segundo recipiente. Adicionar 125g de molho de caramelo e misturar bem.
Deitar um pouco de crème au caramel por colheres de sopa. Em seguida, colocar colheres de creme simples por cima. E assim por diante, em lotes.
A meio do caminho, deitar um pouco de caramelo.
Terminar adicionando o creme restante, alternando creme liso e creme de caramelo por colheres de sopa.
Com um pauzinho ou um pedaço de madeira ou metal, “riscar” o creme para marmoriá-lo.
Cozer a 200°C durante 10 minutos, depois baixar a temperatura do forno para 90°C e cozer durante 1 hora e 10 minutos.
Desligar o forno e deixar o cheesecake arrefecer completamente no interior. Depois colocá-lo num local fresco durante uma noite. Este é o tempo necessário para obter a textura perfeita.
Corte em fatias usando uma faca mergulhada em água quente para fazer boas cunhas. Pode também adicionar um pouco de molho de caramelo de manteiga salgada para uma decadência ainda maior!
