A receita \u00e9 um pouco longa de ler, mas \u00e9 o resultado de muitas tentativas. Todas as dificuldades com que me deparei foram resolvidas. Aqui est\u00e1 a minha receita que tenho mantido em segredo durante muito tempo. Mas todos os meus segredos est\u00e3o aqui!<\/div>\n<div style=\"text-align: justify;\">Os canel\u00e9s de Bordeaux s\u00e3o, como o seu nome indica, de Bordeaux. E se s\u00e3o feitos em moldes estriados, \u00e9 por causa do seu nome original (c\u00e2nulas) e n\u00e3o o contr\u00e1rio, como todos pensam!&nbsp;O canaule&nbsp;era uma esp\u00e9cie de p\u00e3o com gemas de ovo, que caiu no esquecimento no s\u00e9culo XIX e foi ressuscitado no in\u00edcio do s\u00e9culo XX por um pasteleiro que acrescentou rum e baunilha. Dado o nome da pastelaria, ele assa num molde com&nbsp;flautas. Misturar bem, depois adicionar toda a farinha, misturar novamente, depois terminar com a adi\u00e7\u00e3o do leite restante. Nem sequer o ponho no frigor\u00edfico, deixo-o \u00e0 temperatura ambiente. O canel\u00e9 \u00e9 cozinhado em duas fases. Uma primeira queima muito quente que ir\u00e1 congelar a massa no molde, depois uma mais suave que&nbsp;  cozer\u00e1 a massa no interior (se o forno n\u00e3o for aquecido a pelo menos 250\u00b0C, o canel\u00e9 cozinhar\u00e1 quando sair do molde e parecer\u00e1 uma meia velha assada!)  <\/i><\/div>\n<div style=\"text-align: justify;\"><i>Vou dizer-vos porque n\u00e3o recomendo realmente mexilh\u00f5es moles:  <\/i><\/div>\n<div style=\"text-align: justify;\"><i>Primeira raz\u00e3o: o silicone n\u00e3o conduz tanto calor como o cobre ou o alum\u00ednio e nunca conseguir\u00e1 um aut\u00eantico <\/i><i>nunca ter\u00e1 um aut\u00eantico canel\u00e9, perfeitamente estaladi\u00e7o por fora e esponjoso por dentro (como deve ser!).<\/i><\/div>\n<div style=\"text-align: justify;\">\n<div><i>A segunda raz\u00e3o \u00e9 que o silicone n\u00e3o resiste ao calor da primeira cozedura muito quente, e ap\u00f3s v\u00e1rias utiliza\u00e7\u00f5es, o silicone perde as suas qualidades antiaderentes.<\/i><\/div>\n<\/div>\n<div style=\"text-align: justify;\">\n<div><i>Recomendo a utiliza\u00e7\u00e3o de moldes de cobre ou alum\u00ednio forrado a teflon.<\/i><\/div>\n<div><i>Uma \u00faltima observa\u00e7\u00e3o sobre os mexilh\u00f5es (sei que h\u00e1 muitas observa\u00e7\u00f5es, mas foi por n\u00e3o as ter visto no in\u00edcio que consegui fazer os meus canel\u00e9s): eles devem ser  <b>perfeitamente limpo  <\/b>(realmente limpo!) porque se houver vest\u00edgios de utiliza\u00e7\u00e3o dentro do molde, os canel\u00e9s n\u00e3o ser\u00e3o f\u00e1ceis de remover do molde.<\/i><\/div>\n<\/div>\n<div style=\"text-align: justify;\">\n<div>\n<p><i><b><span style=\"color: blue;\"><span style=\"color: #38761d;\">O conselho de Bernard:<\/span> <\/span><\/b><\/i><i>esque\u00e7a a manteiga para untar os moldes! De facto, a manteiga n\u00e3o impede a massa de se colar a&nbsp;canel\u00e9 no final da cozedura, e ol\u00e1 o pesadelo para os retirar do molde! Mas existe uma forma simples (e na minha opini\u00e3o essencial) de tornar mais f\u00e1cil o desmoldamento. Deve utilizar o mesmo produto que os profissionais: um spray de graxa com agentes desmoldantes (\u00e9steres de cera e lecitina de soja). O canaule era uma esp\u00e9cie de p\u00e3o com gemas de ovo, esquecido no s\u00e9culo XIX e ressuscitado no in\u00edcio do s\u00e9culo XX por um pasteleiro que acrescentou rum e baunilha. Dado o nome da pastelaria, cozeu-a em forma de fofo.
