Mas depois de atirar as panquecas contra o frigor\u00edfico (sim, fiquei furioso!!!) pensei que a melhor solu\u00e7\u00e3o era aprender a manusear o rozell num creperie! Por sorte, encontrei-me no creperie em Paris  <b>&#8220;Ty Bernic  <\/b>(54, rue d&#8217;Argout 75002 Paris tel.&nbsp;O restaurante est\u00e1 localizado no cora\u00e7\u00e3o da cidade de Paris (01 42 74 40 15 M\u00b0 Sentier) onde Bertrand e Nathalie tiveram a amabilidade de me aceitar como estagi\u00e1rio durante 2 dias para me ensinarem tudo sobre panquecas. Tive de derramar literalmente dez litros de massa para finalmente obter apenas um em dois&#8230; Dois dias depois, fui para a casa dos meus pais na Bretanha onde o meu bilig me esperava (deixei-o l\u00e1, em Paris n\u00e3o tinha o espa\u00e7o!). E depois esperou-me outra cat\u00e1strofe. No primeiro dia fiz 7 kg de panquecas (trigo e trigo sarraceno) para estar sempre ao mesmo n\u00edvel que no Ty Bernic (ou seja, uma panqueca bem sucedida em duas, mesmo tr\u00eas!). No dia seguinte, 4 kg de panquecas para n\u00e3o as ver todas! Que stress, especialmente porque fico&nbsp;de mau humor quando n\u00e3o tenho sucesso em algo que parece ser simples. O pior era que todas as crian\u00e7as na praia (n\u00e3o muito grandes) tinham vindo e faziam fila para receber as suas panquecas gr\u00e1tis&#8230; Mas eles n\u00e3o se pareciam com nada. Ent\u00e3o, no sexto dia da semana, milagre! Nem um s\u00f3 falhou! \u00c9 como aprender a andar de bicicleta ou de patins. A dada altura, algo clica, e depois o gesto \u00e9 finalmente assimilado.  <\/div>\n<div style=\"text-align: justify;\">\nO gesto \u00e9 simples, mas tem tantos componentes, desde a forma como se segura o rozell, at\u00e9 \u00e0 concha do&nbsp;m\u00e3o esquerda, n\u00e3o pressionar sobre a massa, fazer este movimento de v\u00edrgula, para&nbsp;\u00c9 importante lembrar que demora muito tempo a fazer uma panqueca redonda. Pensa-se demasiado no in\u00edcio para se obter um bom resultado, mas no final, enquanto tudo n\u00e3o for irreflectido e natural, as panquecas n\u00e3o t\u00eam \u00eaxito.  <\/div>\n<div style=\"text-align: justify;\">\nPor isso \u00e9 preciso paci\u00eancia e tenacidade, mas depois de digerir tudo isto, \u00e9 realmente f\u00e1cil e agrad\u00e1vel fazer as suas pr\u00f3prias panquecas.  <\/div>\n<div style=\"text-align: justify;\">\nH\u00e1 muitas receitas diferentes para crepes, quase uma para cada cidade bret\u00e3. Tenho&nbsp;em casa&nbsp;as receitas dos crepes de Quimper, Pleyben, Pontivy, Sabl\u00e9, do pa\u00eds Bigouden, de Carhaix, as velhas receitas de Basse-Bretagne. Mas tamb\u00e9m os crepes do Perd\u00e3o, de Jeanne-Marie, as receitas de L\u00e9on, Tregor e South Finist\u00e8re&#8230;. Em suma, toda uma gama de receitas.&nbsp;<\/div>\n<div style=\"text-align: justify;\">\nAqui est\u00e1 a minha receita favorita para panquecas de trigo. \u00c9 exactamente o que eu procurava. Tinha em mente aquelas panquecas que s\u00e3o vendidas em padarias \u00e0 d\u00fazia, envoltas em pel\u00edcula aderente, com uma textura muito suave.  <\/div>\n<p>\nReceita para cerca de duas d\u00fazias de &#8220;crepes&#8221;:<\/p>\n<p><span style=\"\"><b>-500g de farinha  <\/b><\/span><br \/>\n<span style=\"\"><b>-150g de a\u00e7\u00facar<\/b><\/span><br \/>\n<span style=\"\"><b>4&nbsp;ovos extra-frescos (de galinhas criadas ao ar livre!)<\/b><\/span><br \/>\n<span style=\"\"><b>-1 litro de leite semi-desnatado<\/b><\/span><br \/>\n<b><span style=\"\">-banha para o bilig ou manteiga para uma frigideira<\/span><\/b><\/p>\n<p><\/p>\n<div id=\"adikteev_ad\">\n<i>A maneira mais f\u00e1cil (de longe!!!) \u00e9 preparar a massa da panqueca. Em seguida, adicionar o leite restante. A massa est\u00e1 agora pronta! Pode ent\u00e3o simplesmente mover a frigideira para a ligar novamente.  <\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Eu pessoalmente prefiro a complexidade e por isso tenho o bilig!<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Por isso aqui estou eu, para a Bretanha, o seu mar e o seu sol! At\u00e9 tive de me proteger do sol em Abril (2010)!  <\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><a href=\"http:\/\/3.bp.blogspot.com\/_cOMZ0XF5qz8\/S9hEC7jHVJI\/AAAAAAAACPA\/tJlwsVlAykU\/s1600\/crepes%20079.jpg\" data-rel=\"penci-gallery-image-content\"  imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"640\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2013\/01\/crepes-079-683x1024.jpg\" tt=\"true\" width=\"426\"><\/a><\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Esta \u00e9 a forma como me organizei para trabalhar nas panquecas. \u00c0 direita, o bilig, e \u00e0 esquerda, a massa de panqueca, a esp\u00e1tula de metal (ou de madeira, o spannel!), a almofada para limpar e untar a chapa com banha&nbsp;e, sobretudo, o rozell numa pequena bacia de \u00e1gua.<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Tr\u00eas&nbsp;raz\u00f5es para deixar o rozell na \u00e1gua entre cada panqueca:<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>1-a madeira vai inchar e a junta entre o ancinho e o cabo ser\u00e1 perfeita.<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>2. a massa que possa ter ficado presa ao ancinho ter\u00e1 tempo para se dissolver, pelo que o ancinho permanece limpo.<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>3 &#8211; o ancinho arrefece na \u00e1gua, porque se o ancinho aquecer muito no bilig, a massa da panqueca vai colar-se ao rozell!  <\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><a href=\"http:\/\/2.bp.blogspot.com\/_cOMZ0XF5qz8\/S9hRwVzmJYI\/AAAAAAAACQk\/6eRRCzyELWo\/s1600\/crepes+078.jpg\" data-rel=\"penci-gallery-image-content\"  imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"426\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2013\/01\/crepes-078-1024x683.jpg\" tt=\"true\" width=\"640\"><\/a><\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Trabalho as panquecas (a conselho de Ty Bernic!) num bilig a 240\u00b0C. Desta forma, as panquecas s\u00e3o queimadas e mant\u00eam a suavidade! Cozinham muito rapidamente.<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Claro que podem ser cozinhadas de dois lados, mas para preparar panquecas simples podem ser cozinhadas apenas de um lado. Quando o bilig estiver \u00e0 temperatura desejada, unt\u00e1-lo com a almofada ligeiramente embebida em banha de porco. O bilig&nbsp; n\u00e3o deve ser demasiado gorduroso, caso contr\u00e1rio a massa escorregar\u00e1 e colar-se-\u00e1 ao rozell.&nbsp;<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Deixo o bilig para aquecer durante pelo menos mais 15 minutos a partir do momento em que a luz indicadora se apaga, porque reparei que as panquecas ficam melhor quando a chapa est\u00e1 realmente quente.&nbsp; <\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><a href=\"http:\/\/2.bp.blogspot.com\/_cOMZ0XF5qz8\/S9hKawHP9OI\/AAAAAAAACPw\/P5hrTAAALLQ\/s1600\/crepes+163.jpg\" data-rel=\"penci-gallery-image-content\"  imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"504\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2013\/01\/crepes-163-1024x808.jpg\" tt=\"true\" width=\"640\"><\/a><\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<i><br \/>\n<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Para panquecas de trigo, uma concha n\u00famero 6 (di\u00e2metro em cm) ou 6,5 \u00e9 normalmente utilizada.&nbsp;<\/i><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<i>Com a m\u00e3o esquerda (se for destro), despeja uma concha cheia de massa enquanto a m\u00e3o direita est\u00e1 pronta com o rozell. A massa n\u00e3o deve ser raspada, mas empurrada num suave movimento em forma de v\u00edrgula de volta para o centro. Na imagem abaixo, o movimento (20cm) j\u00e1 est\u00e1 terminado, mas \u00e9 poss\u00edvel ver a massa que voltou ao centro do bilig. Parece t\u00e3o simples quando se v\u00ea, mas quando se tem o rozell na m\u00e3o, garanto que n\u00e3o \u00e9 a mesma hist\u00f3ria.
