O resultado s\u00e3o macarr\u00f5es pr\u00e9 cozidos que requerem menos tempo no forno, perdendo assim menos cor e menos castanho. Ladur\u00e9e sempre me pareceu ser a perfei\u00e7\u00e3o para os macarr\u00f5es. Este \u00e9 sempre o caso, mas afinal de contas compreendo que nem todos gostam. Quanto ao facto de serem todos iguais, compreendo muito bem, pois \u00e9 o gesto de&nbsp;formar os pontos de pastelaria com o saco de pastelaria que conta. Assim, a seu tempo, chegamos l\u00e1. No entanto, foi a planeza que me enlouqueceu! Procurei a solu\u00e7\u00e3o, pensando no in\u00edcio que era a massa que tinha de ser um pouco mais l\u00edquida, mas n\u00e3o, a massa n\u00e3o cozinhava da mesma maneira. Tamb\u00e9m pensei que estavam a usar um chablon (uma esp\u00e9cie de molde) para alisar a massa. Eu pr\u00f3prio fiz este jacto de areia e o resultado foi um desastre! Ent\u00e3o como?!!! Bem, descobri-o por acaso. O que expliquei antes, batendo levemente, bem esse era o segredo. Por isso, deixem-me insistir. Assim que fiz uma massa de macaroon que n\u00e3o era suficientemente fluida, tive de for\u00e7ar a massa a amolecer. Como \u00e9 que se faz? Levando o prato nas m\u00e3os e deixando-o cair pelo menos 30-40cm de altura sobre a mesa! O choque achatou&nbsp;os macaroons (ainda n\u00e3o cozidos!!!). Ainda n\u00e3o satisfeito, tentei duas ou tr\u00eas vezes. O resultado foi o mais correcto. Os pequenos picos na massa tinham desaparecido. Mas agora j\u00e1 percebi! Basta fazer isto sempre e os macarr\u00f5es v\u00e3o-se aplanar!
