E por &#8220;O&#8221;, quero dizer aquele de que eu gosto! Porque h\u00e1 tantos Paris-Brest como h\u00e1 cozinheiros que os preparam. Tentei v\u00e1rias vers\u00f5es e at\u00e9 agora nenhuma delas me agradou. Por isso, fiz o sacrif\u00edcio de provar muito Paris-Brest para descobrir o que eu queria. E depois, bingo! Compreendi o que eu queria. Tudo o que restava era compor a receita dos meus sonhos. Assim, fiz tudo como o senti (sem um livro) e notei as propor\u00e7\u00f5es que usei \u00e0 medida que ia avan\u00e7ando. Assim, estou a dar-vos sem demora a receita do meu rico e cremoso creme Paris-Brest.<\/div>\n<p><a name=\"more\"><\/a><\/p>\n<div style=\"text-align: justify;\"><b>A receita que vos estou a dar aqui \u00e9 apenas um reflexo do que tinha em mente. \u00c9 livre de mudar o que quiser. Sei, por exemplo, que esta receita n\u00e3o vai agradar ao meu pai (que, desde a reforma, tem feito muitos bolos&#8230;) que vai preferir um chantilly com pralina, montado mesmo antes de encher as rodadas de pastelaria de choux. A minha vers\u00e3o \u00e9 muito mais rica. \u00c9 de facto um creme de mousseline (creme de manteiga + mostarda) mas em propor\u00e7\u00f5es que eu gosto. Fa\u00e7o o meu creme de creme de manteiga, ou seja, com um creme suave (n\u00e3o o habitual) e sem merengue italiano. O resultado \u00e9 um creme maravilhoso que se mant\u00e9m perfeitamente unido. Pode divertir-se a produzir os &#8220;desenhos&#8221; que quiser com o saco de encanamentos. N\u00e3o se esque\u00e7a de preparar as rodadas de pastelaria choux no dia anterior, de modo a que se possam tornar obsoletas.
