A explica\u00e7\u00e3o \u00e9 simples: se parar de cozinhar nesta altura, obt\u00e9m-se uma esp\u00e9cie de nougat muito escorregadio que mal endurece no frigor\u00edfico. \u00c9 portanto necess\u00e1rio continuar a cozinhar o nougat neste banho de \u00e1gua para evaporar toda a \u00e1gua contida nos brancos, o mel, o xarope de a\u00e7\u00facar para secar o nougat. Quanto mais tempo se espera, mais duro e mais fr\u00e1gil se torna o nougat. \u00c9 exactamente assim que se obt\u00e9m um nougat Mont\u00e9limar. Excepto que para o turr\u00f3n duro de Alicante, \u00e9 necess\u00e1rio ir muito al\u00e9m desta fase para secar quase completamente a pasta de nougat. Naturalmente, os profissionais t\u00eam m\u00e1quinas mais eficientes do que os nossos banhos de \u00e1gua&#8230;. Mas pode faz\u00ea-lo sem! Para obter a firmeza desejada, uma pequena quantidade de massa \u00e9 retirada e mergulhada em \u00e1gua fria para ver como cozinhou bem. Para este, passei quase 45 minutos a virar a massa com uma colher no seu banho de \u00e1gua a ferver&#8230; \u00c9 o tempo que provavelmente vai passar a secar o nougat!
