Desde que participei no pequeno relat\u00f3rio sobre a M6 (que nem sequer menciona que tenho um blogue de culin\u00e1ria&#8230;) ofere\u00e7o-vos uma receita de tarama todas as semanas. Desta vez, era uma associa\u00e7\u00e3o muito original que eu tinha descoberto na loja do espect\u00e1culo. Um delicioso tarama, temperado para o prazer do nosso paladar. Gra\u00e7as \u00e0s mol\u00e9culas tensioactivas na gema de ovo que t\u00eam uma extremidade hidrof\u00edlica e lipof\u00edlica (uma que gosta de \u00e1gua e a outra de \u00f3leo!).&nbsp;A extremidade sol\u00favel em \u00e1gua&nbsp;\u00e9 colocada em \u00e1gua (ou leite aqui) e a outra em \u00f3leo. Isto \u00e9 o que mant\u00e9m tudo junto. &nbsp;A olho nu, a maionese parece coerente, enquanto sob o microsc\u00f3pio \u00e9&nbsp;gotas de azeite dispersas em pequena quantidade de \u00e1gua (mostarda ou vinagre para maionese). Para o tarama \u00e9 o mesmo: basta adicionar um pouco de gema de ovo (t\u00e3o pouco que n\u00e3o ter\u00e1 sabor) que funcionar\u00e1 como um catalisador dando coes\u00e3o \u00e0 prepara\u00e7\u00e3o. H\u00e1 a \u00e1gua no leite (do p\u00e3o) e o \u00f3leo que \u00e9 adicionado. Com isto, o tarama \u00e9 for\u00e7ado a segurar e emulsionar. Com a minha nova ordem de prepara\u00e7\u00e3o, n\u00e3o pode falhar mais. Os tempos de agita\u00e7\u00e3o devem ser respeitados (especialmente a gema com o p\u00e3o embebido, depois com um pouco de \u00f3leo).
