Hoje estou a juntar a massa preparada a partir de um poolish. O que \u00e9 isso? \u00c9 uma prepara\u00e7\u00e3o pr\u00e9-fermentada \u00e0 base de \u00e1gua e farinha, em quantidades equivalentes com um pouco de levedura. A massa \u00e9 misturada e deixa-se subir a um estado muito l\u00edquido. No dia seguinte, a massa \u00e9 feita a partir deste poolish e a farinha e o resto dos ingredientes da massa s\u00e3o adicionados. O resultado \u00e9 uma massa deliciosamente estaladi\u00e7a e inchada. A pasta \u00e9 radicalmente diferente. E isso significa que n\u00e3o tem de usar uma massa levedada, o que ocupa demasiado tempo em casa. Tem de fazer esta receita com os meios \u00e0 m\u00e3o: os puristas dir\u00e3o que tem de usar outra farinha (a vermelha ou a azul), verifique o seu &#8220;w&#8221;&#8230; Aqui fazemos pizzas caseiras! E o resultado \u00e9 excelente!&nbsp;<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\nPara mim, \u00e9 uma escolha aleat\u00f3ria: fiz uma pizza branca com esta massa, mas \u00e9 \u00f3bvio que se pode fazer uma pizza com um molho de tomate mais cl\u00e1ssico. Inversamente, uma pizza branca pode ser feita com uma massa sem poolish. O que estou a fazer n\u00e3o \u00e9 tradicional, deixem-me deixar isso bem claro! Farinho muito a parte superior da massa e coloco-a sobre uma folha de cozedura. Coloquei outro tabuleiro em cima da massa bem florida, que \u00e9 depois ensanduichada entre os dois tabuleiros. Ainda estou a ser seguido? \ud83d\ude42 Depois viro tudo e a massa repousa no seu lado fortemente enfarinhado.
