Recentemente sugeri algumas tortas de creme de xadrez. Aqui estou eu a trabalhar com os meus moldes de past\u00e9is, mas isso \u00e9 normal, porque acabei de dar uma oficina de past\u00e9is de nata. Sobra sempre um pouco de massa e os estudantes perguntam-me o que mais pod\u00edamos fazer com ela. Pensei nestas tartes Epoisses e Maroilles para fazer uma vers\u00e3o saborosa. Se se amassar directamente com a m\u00e1quina, a \u00e1gua vai amassar \u00e0 volta do gancho e a massa n\u00e3o se vai formar. Ter\u00e1 de adicionar \u00e1gua quando, de facto, n\u00e3o necessita necessariamente dela. Isto permitir-nos-\u00e1 enrolar a massa sobre si mesma.&nbsp;<\/span>Retirar o excesso com uma toalha de papel. Se houver demasiada \u00e1gua, a massa n\u00e3o se colar\u00e1.
