Queria reproduzir a mesma forma de p\u00e3o e estaladi\u00e7a. \u00c9 em \u00faltima an\u00e1lise como um kouign amann sem a\u00e7\u00facar e os diferentes m\u00e9todos que aprendi antes ajudaram-me claramente a fazer este p\u00e3o. Um prazer que voltarei a fazer regularmente&#8230;<\/div>\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p><a name=\"more\"><\/a>Receita para 3 p\u00e3es de massa folhada de 250g:<\/p>\n<div style=\"text-align: left;\">\n<\/div>\n<ul>\n<li><b><span style=\"\">500g de farinha T55<\/span><\/b><\/li>\n<li><b><span style=\"\">5g de levedura seca de padeiro&nbsp;<\/span><\/b><\/li>\n<li><b><span style=\"\">8g de sal<\/span><\/b><\/li>\n<li><b><span style=\"\">355g de \u00e1gua fria<\/span><\/b><\/li>\n<li><b><span style=\"\">300g de manteiga seca (ou manteiga Charentes Poitou DOP) com pelo menos 82% de teor de gordura<\/span><\/b><\/li>\n<\/ul>\n<p><\/p>\n<div style=\"text-align: center;\">\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\nColocar a farinha, sal e fermento num processador de alimentos. Pode parar quando a massa sai da lateral da tigela. \u00c9 muito macio e el\u00e1stico. Isto \u00e9 bastante normal! N\u00e3o se preocupem.&nbsp;<\/span><br \/>\n<span style=\"text-align: justify;\">No in\u00edcio a massa est\u00e1 muito h\u00famida e \u00e0 medida que a amassa, a levedura torna-se activa. A massa vai sair cada vez mais da parede da cuba e &#8220;bater&#8221;. Em seguida, colocar pel\u00edcula aderente em cima da massa e arrefecer durante a noite. A massa vai inchar lentamente no refrigerador e desenvolver os sabores.<\/div>\n<div style=\"text-align: justify;\">\nNo dia seguinte, retirar a manteiga seca (tamb\u00e9m conhecida como manteiga seca ou manteiga tourage) 15 minutos antes da massa. Bater na manteiga fria com um rolo para amolecer enquanto a mant\u00e9m fresca (o frio, n\u00e3o a data de validade! ????). Tente escrever o melhor que puder, tornando-o um quadrado de cerca de 20cm em cada lado. Mas leia atentamente as minhas instru\u00e7\u00f5es. Dobrar sobre um pequeno peda\u00e7o da aresta superior. Transforme a massa a 90\u00b0 e enrole-a num longo rect\u00e2ngulo. Fazer uma segunda volta dupla.&nbsp;<\/div>\n<div style=\"text-align: justify;\">\nCobrir a massa com pel\u00edcula aderente e deix\u00e1-la a descansar num local fresco durante 30 minutos.&nbsp;<\/div>\n<div style=\"text-align: justify;\">\nFinalmente, estender-se para um quadrado de cerca de 40cm. Tentar ser o mais regular poss\u00edvel.
