Com o ova de bacalhau ou&nbsp;mullet,&nbsp;ofere\u00e7o-vos a minha receita, que \u00e9 exactamente o que espero do tarama!<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><b>Novembro de 2011<\/b>: Estou a colocar o tarama novamente em destaque porque acabo de participar numa breve reportagem sobre esta receita de M6 (100% mag, que ser\u00e1 transmitida no in\u00edcio de Dezembro) e foi um desastre! Depois de ter feito tarama perfeitamente duas ou tr\u00eas vezes (com a receita no meu blog), n\u00e3o consegui que ficasse nada bem. De facto, acabou por se revelar como uma maionese falhada&nbsp;e eu n\u00e3o consegui compreender a raz\u00e3o. No dia do tiroteio em casa, foi ainda pior do que o habitual! Fora da c\u00e2mara, apanhei tudo (por isso a hist\u00f3ria est\u00e1 salva, phew!) e jurei compreender as raz\u00f5es para a n\u00e3o emuls\u00e3o. Se vir o programa, esque\u00e7a o que eu digo! Dou-vos agora um m\u00e9todo para nunca perderem um tarama! Tentei compreender como \u00e9 que uma maionese toma (porque \u00e9 o mesmo princ\u00edpio, apesar de nunca ter falhado uma maionese!) e apliquei o mesmo princ\u00edpio ao tarama. Porque \u00e9 preciso saber que esta prepara\u00e7\u00e3o gira num instante e \u00e9 dif\u00edcil de compensar. Agora,&nbsp;nunca&nbsp;ser\u00e1 o caso com o elemento que estou a acrescentar! Venha&nbsp;e descubra&nbsp;porqu\u00ea!<\/div>\n<p><a name=\"more\"><\/a><\/p>\n<div style=\"text-align: justify;\"><b>Porque \u00e9 que a maionese se mant\u00e9m? Gra\u00e7as \u00e0s mol\u00e9culas tensioactivas na gema de ovo que t\u00eam uma extremidade hidrof\u00edlica e lipof\u00edlica (uma que gosta de \u00e1gua e a outra de \u00f3leo!).&nbsp;A extremidade sol\u00favel em \u00e1gua&nbsp;\u00e9 colocada em \u00e1gua (ou leite aqui) e a outra em \u00f3leo. Isto \u00e9 o que mant\u00e9m tudo junto. &nbsp;A olho nu, a maionese parece coerente, enquanto sob o microsc\u00f3pio \u00e9&nbsp;gotas de azeite dispersas em pequena quantidade de \u00e1gua (mostarda ou vinagre para maionese). Para o tarama \u00e9 o mesmo: basta adicionar um pouco de gema de ovo (t\u00e3o pouco que n\u00e3o ter\u00e1 sabor) que funcionar\u00e1 como um catalisador dando coes\u00e3o \u00e0 prepara\u00e7\u00e3o. H\u00e1 a \u00e1gua no leite (do p\u00e3o) e o \u00f3leo que \u00e9 adicionado. Com isto, o tarama \u00e9 for\u00e7ado a segurar e emulsionar. Com a minha nova ordem de prepara\u00e7\u00e3o, n\u00e3o pode falhar mais. Os tempos de agita\u00e7\u00e3o devem ser respeitados (especialmente a gema com o p\u00e3o embebido, depois com um pouco de \u00f3leo). Quando os ovos de bacalhau (ou tainha) s\u00e3o adicionados, a emuls\u00e3o j\u00e1 come\u00e7ou e n\u00e3o pode ser parada! \u00c9 isso, \u00e9 a qu\u00edmica.<\/b><\/div>\n<h2>Receita de &#8220;tarama&#8221; para 4 a 6 pessoas:<\/h2>\n<p><b>-70g de migalhas de p\u00e3o (p\u00e3o sem a c\u00f4dea, mas de qualidade!)<\/b><br \/>\n<b>-1\/2 gema de ovo (basta pegar um pouco de gema)<\/b><br \/>\n<b>-um saco de 280g de ovas de bacalhau fumado (ou tainhas, se dispon\u00edveis)<\/b><br \/>\n<b>-170g a 200g&nbsp;de petr\u00f3leo<\/b><br \/>\n<b>-1\/2 copo de leite<\/b><\/p>\n<h2 id=\"adikteev_ad\">As instru\u00e7\u00f5es :<\/h2>\n<p><i>Comece por remover a crosta do p\u00e3o.
