Claro que existem muitas varia\u00e7\u00f5es deste delicioso prato entre o norte, centro e sul do Vietname. Fiz dezenas de perguntas a muitos vietnamitas para obter o melhor m\u00e9todo para obter um muito saboroso ph\u1edf. Comi-o quase todos os dias da minha estadia (ao pequeno-almo\u00e7o ou ao jantar), empanturrei-me em rolos de primavera e provei muitas outras coisas deliciosas, as quais vos convido a descobrir no meu relat\u00f3rio que porei em linha muito em breve. \u00c9 um pa\u00eds com uma cultura alimentar muito saud\u00e1vel e deliciosa. Em breve publicarei algumas receitas novas e muito tradicionais. Apresento-vos aqui todos os elementos que reuni. Cada cozinheiro tem a sua pr\u00f3pria receita (como crepes na Bretanha) e reparei que o ph\u1edf que provei em Saig\u00e3o, n\u00e3o \u00e9 exactamente o mesmo que o de Han\u00f3i e o do centro do pa\u00eds. Portanto, vou dar-vos a receita do caldo, e cabe-vos a v\u00f3s acrescentar as ervas e outras coisas que quiserem! Em qualquer caso, esta receita \u00e9 perfeita: um prato completo e muito saud\u00e1vel. Um caldo picante com carne fina e muito tenra em que s\u00e3o adicionadas ervas arom\u00e1ticas e, dependendo da vers\u00e3o, nuoc m\u00e2m, molho de hoisin e alguns rebentos de feij\u00e3o mungo. Perfeito para uma refei\u00e7\u00e3o equilibrada com os amigos!&nbsp;<\/div>\n<\/div>\n<p>Ph\u1edf receita:<br \/>\n<strong><br \/>\nPara o caldo Ph\u1edf:<\/strong><strong><br \/>\n-2 cebolas grandes<\/strong><strong><br \/>\n-1 raiz de gengibre<\/strong><strong><br \/>\n-2kg de osso de bovino (joelho ou outro osso contendo cartilagem&#8230;)<\/strong><strong><br \/>\n-30g de a\u00e7\u00facar (palmeira ou semolina)<\/strong><strong><br \/>\n-2 colheres de sopa de nuoc m\u00e2m<\/strong><strong><br \/>\n-6 badianes (anis estrelado)<\/strong><strong><br \/>\n-2-3 pauzinhos de canela<\/strong><strong><br \/>\n-1 colher de sopa de sementes de coentros<\/strong><strong><br \/>\n-5 c\u00e1psulas de cardamomo<\/strong><strong><br \/>\n-6 cravo-da-\u00edndia<\/strong><strong><br \/>\n-4 a 5 litros de \u00e1gua<\/strong><strong><br \/>\n-1 pequeno filete de carne de vaca<\/strong><strong><br \/>\n-3-4 Cebolinho chin\u00eas<\/strong><strong><br \/>\n-1 molho de manjeric\u00e3o tailand\u00eas<\/strong><strong><br \/>\n-1 ramo de coentros longos<\/strong><strong><br \/>\n-1 garrafa de nuoc m\u00e2m<\/strong><strong><br \/>\n-1 garrafa de molho hoi-sin<\/strong><strong><br \/>\n-2 a 3 limas<\/strong><strong><br \/>\n-1 pacote de pasta de arroz<\/strong><strong><br \/>\n-1 ou 2 malaguetas vermelhas ou verdes, n\u00e3o muito quentes<\/strong><strong><br \/>\n-500g de rebentos de feij\u00e3o mungo&nbsp;<br \/>\n<\/strong><br \/>\n<em><br \/>\nColocar a carne no congelador durante pelo menos 3 horas antes de a cortar em fatias finas. Cabe-lhe a si decidir quando isto \u00e9 mais apropriado. Alguns acrescentam carne ao caldo, outros n\u00e3o. Encontrei o meu gengibre um pouco seco, pois tinha sido cozinhado com a cebola), por isso adicionei algumas fatias de gengibre fresco. A gordura na superf\u00edcie \u00e9 a medula dos ossos. Removi parte, mas ainda deixo alguma para o gosto. O caldo pode ser desengordurado depois.&nbsp;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-19-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: justify;\"><em><br \/>\nAqui est\u00e3o as especiarias para o ph\u1edf: pau de canela, anis estrelado, cravinho, cardamomo, sementes de coentros. Tamb\u00e9m coloquei o a\u00e7\u00facar para a fotografia.&nbsp;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-20-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"text-align: justify;\"><em><br \/>\nColocar as especiarias em pequenos sacos de pano. Procurei por todo o lado o meu pano de algod\u00e3o, que n\u00e3o consegui encontrar, por isso fui \u00e0 farm\u00e1cia para comprar gaze para as ligaduras. \u00c9 perfeito e n\u00e3o \u00e9 nada caro!&nbsp;<br \/>\n<\/em><br \/>\n<em><br \/>\n<strong><br \/>\nO conselho de Bernard:<br \/>\n<\/strong><br \/>\nPara sabores ainda mais fortes, pode brindar ligeiramente algumas especiarias numa frigideira&#8230;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-21-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"text-align: justify;\"><em><br \/>\nFechar os ma\u00e7os (precisava de dois) com cordel. A canela n\u00e3o precisa de ser empacotada.&nbsp;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-22-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"text-align: justify;\"><em><br \/>\nEste \u00e9 o molho nuoc m\u00e2m. O mais importante quando se compra nuoc m\u00e2m \u00e9 o n\u00famero na garrafa. Isto d\u00e1 a concentra\u00e7\u00e3o de sal. 35\u00b0 \u00e9 perfeito!&nbsp;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-23-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<p><em><br \/>\nAdicionar o nuoc m\u00e2m e o a\u00e7\u00facar ao caldo de carne.&nbsp;<br \/>\n<\/em><\/p>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-24-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"text-align: justify;\"><em><br \/>\n\u00c9 isso mesmo! A parte mais dif\u00edcil est\u00e1 feita! Agora ferver, depois reduzir o calor a moderado a baixo e ferver em lume brando durante 4 a 6 horas. N\u00e3o h\u00e1 necessidade de se preocupar com isso. Entretanto fui para a minha sesta!<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-25-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"text-align: justify;\"><em><br \/>\nQuanto mais longo e mais suave for o caldo, mais saboroso ser\u00e1. H\u00e1 tamb\u00e9m cubos de caldo prontos a usar&nbsp;ph\u1edf, pode adicionar um cubo ao l\u00edquido, mas n\u00e3o recomendo a substitui\u00e7\u00e3o de um caldo caseiro por este cubo. Mas acrescenta sabor ao&nbsp;ph\u1edf.<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-26-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<p><em><br \/>\nTodos os elementos do caldo devem agora ser removidos. N\u00e3o cometa o erro de esvaziar o conte\u00fado num escorredor e ver o seu stock ir pelo cano abaixo&#8230; \u00c9 o contr\u00e1rio. Digo isto porque quase o fiz (um gesto que fazemos frequentemente quando cozinhamos massa!!).&nbsp;<br \/>\n<\/em><br \/>\n<em><br \/>\nPode-se ver aqui que h\u00e1 um pouco de gordura (n\u00e3o muito em compara\u00e7\u00e3o com os 4 litros de caldo) na superf\u00edcie. Se quer realmente livrar-se dele, deve deixar o caldo arrefecer completamente e depois remover a gordura que se congelou.&nbsp;<br \/>\n<\/em><\/p>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-27-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: justify;\"><em><br \/>\nAqui est\u00e1 o caldo depois de a maior parte da gordura ter sido removida (tirei a foto no dia seguinte). No pacote diz que s\u00f3 precisa de \u00e1gua morna, mas prefiro \u00e1gua muito quente (da torneira), pois desta forma a massa j\u00e1 estar\u00e1 quente quando a adicionar ao caldo.&nbsp;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-33-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: justify;\"><em><br \/>\nLavar e preparar as suas ervas frescas: manjeric\u00e3o tailand\u00eas e coentros de folha longa. Cortar a lima em peda\u00e7os. Cortar as cebolinhas em pequenos peda\u00e7os.&nbsp;<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-34-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<p><em><br \/>\nDuas op\u00e7\u00f5es novamente para a carne: se as suas tigelas forem grandes, como vai adicionar muito caldo quente, pode colocar a carne directamente nelas. A carne coze instantaneamente e ser\u00e1 t\u00e3o tenra quanto desejado.&nbsp;<br \/>\n<\/em><\/p>\n<div style=\"text-align: justify;\"><em><br \/>\nA outra op\u00e7\u00e3o \u00e9 ter um pote de \u00e1gua a ferver nas proximidades e mergulhar a carne durante 15 segundos antes de a colocar (bem drenada) nas tigelas.
