O Outono é realmente a minha época favorita. Sou um amante de nozes e já fiz tartes de nozes no passado, mas desta vez queria uma tarte. E que melhor maneira de celebrar esta estação maravilhosa do que com uma “tuorta da nusch”, a famosa tarte de nozes do Engadine nos Alpes suíços? Delicioso para um lanche, não consigo resistir a uma boa fatia durante muito tempo.
Receita para uma tarte de 18 ou 20cm (dependendo da espessura da camada de nozes desejada!):
Colar :
180g de manteiga semi-salgada
115g de açúcar
1 ovo
300g de farinha
Caramelo com nozes :
175g de açúcar
uma boa pitada de sal
50g de xarope de glucose
20cl de creme duplo
30g de mel
300g de nozes
Preparar a massa. Colocar a manteiga e o açúcar numa tigela.
Misture até ter uma espécie de creme. Acrescentar o ovo e misturar novamente.
Verter a farinha e misturar até ter uma massa lisa. Não misturar em demasia, parar quando a massa se aglomerar.
Dividir a massa em duas peças, uma mais pequena do que a outra. Envolver em película aderente e arrefecer.
Entretanto, deitar o açúcar, xarope de glucose, sal e água suficiente para mergulhar o açúcar.
Levar à ebulição.
O açúcar tornar-se-á gradualmente colorido. Pode misturar sem se preocupar, porque o xarope de glucose impede que o açúcar se cristalize.
Quando o caramelo for âmbar, adicionar o creme duplo aquecido. Tenha cuidado com o vapor muito quente.
Misturar bem e aquecer a 114°C.
Quando esta temperatura for atingida, verter os 30g de mel. Misture e desligue o calor.
Cortar as nozes grosseiramente.
Verter para o caramelo (apagar o fogo).
Verter esta deliciosa mistura para um recipiente.
Quando a massa estiver fresca, enrole-a sobre uma superfície de trabalho enfarinhada. Coloque a massa maior no seu molde (pré-grossada) ou círculo. Certifique-se de que tem um bom ângulo recto com o fundo do círculo ou molde. Se utilizar um círculo, colocá-lo sobre um tabuleiro forrado com papel vegetal ou um tapete de cozedura.
Verter todo o caramelo de nozes.
Cobrir com a massa mais pequena.
Cortar a massa ao tamanho do molde.
Selar a massa com um garfo a toda a volta. Caso contrário, o caramelo sairá.
Também picar a massa.
Cozer durante 50 minutos a 175°C. O topo deve ser castanho dourado.
Fatiar a tarte de nozes. Para o cortar perfeitamente, deixo-o arrefecer completamente, mas como-o à temperatura ambiente. O caramelo terá a consistência ideal!
