Adoro fazer bolos para o Natal. O cheiro destes produtos enquanto cozinham enche toda a casa com uma fragrância reconfortante. Ofereço-vos a minha versão do Stollen, este bolo alemão entre o pão e o brioche, recheado com frutos secos embebidos em álcool. Aqui é preenchido com maçapão e coberto com açúcar de canela e um pouco de açúcar de confeiteiro para decoração.
Para 2 estollens:
Partir para macerar no dia anterior
125g de sultanas louras
125g sultana sultanas
25g de casca de laranja cristalizada
25g de casca de limão cristalizada
rum âmbar
Para a massa :
480g de farinha
8g de levedura seca ou 15g de levedura fresca
60g de açúcar
170g de leite semi-desnatado
180g de manteiga semi-salgada
1 boa pitada de pó de cardamomo
1 boa pitada de canela moída
50g de amêndoas inteiras, descascadas
25g de amêndoas fendidas
o sabor de um limão não tratado
maçapão de 365g (a dividir em dois)
Finalmente:
200g de açúcar (nem tudo é utilizado!!!)
20g de canela em pó
50g de manteiga derretida
um pouco de açúcar de confeiteiro
Colocar as uvas, casca de limão cristalizada e casca de laranja cristalizada num recipiente.
Verter o rum e sair para inchar durante a noite.
No dia seguinte, grande parte do rum tinha sido absorvido.
Assar as amêndoas inteiras no forno durante 15 minutos a 170°C.
Cortá-los grosseiramente com uma faca.
Verta a farinha, leite, fermento, açúcar e especiarias para a tigela do seu processador de alimentos ou para uma tigela.
Adicionar também a manteiga derretida e amassar durante 5-7 minutos.
Deve-se ter uma pasta homogénea.
Adicionar as uvas drenadas e a casca cortada em pequenos pedaços.
Não se esqueça das amêndoas picadas e das amêndoas fendidas.
E o sabor do limão não tratado.
Amassar novamente e depois sair para se levantar durante 2 horas num local quente.
A massa não subirá muito, mas o suficiente.
Tomar um pedaço de maçapão de 170g e metade da massa.
Enrolar a pasta de amêndoa numa salsicha.
Estender a massa de modo a que seja ligeiramente mais longa do que a salsicha.
Colocar a salsicha em cima da massa e dobrá-la. Enrolar um pouco para cima.
Virar e colocar sobre um tabuleiro forrado com papel vegetal.
Fazer o mesmo para o segundo stollen.
Cozer a 170°C durante 40 minutos.
Misturar o açúcar de rícino com a canela.
Pincele manteiga derretida sobre a superfície antes de adicionar o açúcar de canela.
Colocar uma boa camada de açúcar. Isto irá aderir à manteiga derretida e poderá remover qualquer excesso posteriormente. Deixar repousar até à temperatura ambiente. Nesta altura, pode remover o excesso de açúcar e polvilhar com açúcar em pó apenas para decoração!
