Apresento-vos os quadrados de datas, uma sobremesa ou um bolo para aperitivos canadianos. Este é um delicioso bolo feito a partir de massa de aveia com recheio de pasta de tâmara. Para tal, devem ser cozinhados e parcialmente purgados. Com vergôntea loira e manteiga semi-salgada, verá, é totalmente irresistível!
Ingredientes para um molde quadrado de 20cm:
Pasta de data :
450g de datas marcadas
220ml de água
1/2 colher de chá de bicarbonato de sódio
20g de sumo de limão
Massa de amassar :
175g de farinha de aveia
170g de farinha
150g de vergeoise loira ou castanha
225g de manteiga semi-salgada
Retire as pedras das suas datas, certificando-se de que não há pequenos bugs no interior (sim!).
Corte-os em pedaços e coloque-os numa frigideira com água, sumo de limão e bicarbonato. Verá, vai espumar e quebrar a textura das datas.
Deixar ferver e depois cozinhar durante 5-7 minutos em lume moderado, mexendo o tempo todo.
Misturar as datas parcialmente, mas não completamente.
Se houver peças, tudo bem! Deixe isso de lado enquanto prepara o resto da receita.
Coloque todos os ingredientes para a massa na tigela do seu processador de alimentos.
Sem um processador de alimentos, misture com a ponta dos dedos. Caso contrário, utilizar a folha.
Misturar até ter uma espécie de massa desfeita.
Alinha uma lata de 20cm com papel vegetal. Coloquei 2 peças. De uma maneira e de outra a outra. Verter metade da massa (360g) para dentro da lata.
Aplainar a massa à mão.
Cozer a 170°C durante 15 minutos.
Retirar do forno e deitar toda a pasta de tâmaras.
Espalhe uniformemente com uma colher.
Despeje o resto da massa, desta vez fazendo pedaços de pedaços. Pressionar um pouco a massa sem a forçar. Isto evitará que as peças caiam em pó depois de cozinhadas.
Voltar ao forno durante 35-40 minutos a 170°C. Fique atento à coloração.
Deixar arrefecer completamente antes de cortar em quadrados.
Armazenar os quadrados de datas numa caixa hermética num local fresco.
