Durante a minha viagem à Irlanda (que se pode ler sobre AQUI), descobri pães curtos idênticos com farinha de limão e milho. Esta última proporciona uma nova consistência e um pouco mais de crocante. Têm um delicioso sabor a manteiga e são perfeitamente estaladiços. Um delicioso acompanhamento para um sorbet de limão!
Receita:
85g de açúcar
150g de manteiga mole
15 casca de limão
210g de farinha
50g de farinha de milho
1/2 colher de chá de baunilha líquida
uma boa pitada de sal
Coloque o açúcar e a manteiga na tigela do seu processador de alimentos ou num recipiente.
Acrescentar a casca de limão. Para 15g, trata-se do sabor de um grande limão.
Acrescentar também a baunilha e o sal.
Misturar com um processador de alimentos ou uma colher para obter uma espécie de creme.
Acrescentar a farinha e a farinha de milho. Pode encontrá-la em supermercados orgânicos. É farinha de milho e não semolina polenta.
Misture novamente apenas até ter uma pasta macia, não mais.
Trazer a massa para uma bola.
Tirar metade da massa. Espalhar em papel vegetal. Se tiver um rolo de pastilha com padrão, a superfície deve ser ligeiramente enfarinhada.
Depois passar o rolo. É óbvio que se pode passar sem este tipo de utensílio e fazer os pães curtos sem ele. Se usar um rolo de moldes, não espalhe demasiado a massa antes de rolar o molde, pois o molde também se espalhará novamente.
Cortar pão curto com um cortador de biscoitos.
Colocar o pão curto sobre um tabuleiro para cozer. Usei aqui o tapete de ar Silikomart. É perfurado e permite que os pães curtos não inchem. Fazer o mesmo para a massa restante.
Cozer a 170°C durante 18 minutos.
Manter o biscoito numa caixa hermética.
