Durante a minha estadia na Andaluzia (ver a viagem culinária clicando AQUI), tive a oportunidade de visitar Arcos de la Frontera pouco antes da Semana Santa. Isto é quando preparam este bolo típico da cidade. Se tivesse chegado mais cedo ou numa altura diferente do ano, nunca teria experimentado um bolo tão original! A forma deu-me a impressão de que ia comer algum tipo de pão curto , mas o sabor delicioso do anis, do açúcar e do azeite não era suficiente. Tinha visto a composição na embalagem artesanal e por isso comecei a trabalhar em casa para reproduzir a receita para si! A massa é um prazer trabalhar com ela e pode ser feita em poucos minutos. Além disso, estes bolos são deliciosos com chá e podem ser armazenados durante muito tempo numa caixa adequada .
Receita para 9 bolos de Arcos de le Frontera:
-420g de farinha -10g de açúcar -20g de anis -15g de sementes de gergelim torradas -5g de canela -1 pacote de levedura de padeiro (tipo Francine) ou 20g de levedura fresca -150g de azeite de oliva -cerca de trinta amêndoas descascadas -açúcar empobrecido
Colocar a farinha, o açúcar, as sementes de sésamo e o anis num processador de alimentos ou numa tigela grande.
Mexer, adicionar canela em pó.
Acrescentar o azeite de oliva.
Diluir a levedura fresca ou seca num pouco de água quente.
Misturar e adicionar a água necessária para fazer uma massa funcional .
Deixar de pé durante 1 hora num local quente.
Colocar açúcar na superfície de trabalho.
Enrolar a massa no açúcar e trabalhá-la um pouco para incorporar o açúcar.
Dividir a massa em 9 peças. Enrolar cada pequeno pedaço de massa numa salsicha no açúcar.
Quando a salsicha for formada, certifique-se de que o açúcar é enrolado à sua volta.
Enrolar a salsicha sobre si mesma e fechar, pressionando a massa nas pontas unidas.
Colocar 3 amêndoas por bolo, pressionando-as na massa. Uma amêndoa deve fechar a junta!
Cozer a 190°C durante cerca de 15 minutos, mantendo-se atento! Tudo depende do forno utilizado!
Deixar arrefecer e depois armazenar numa caixa hermética. Como não há ovo ou manteiga, pode guardá-los durante muito tempo!
