Obviamente gostou dos muffins atómicos de chocolate, por isso estou de novo a fazê-lo com estes muffins de nozes de macadâmia. Uma receita muito simples mas com um sabor delicioso que é reconfortante neste tempo gelado! Adiciono óleo de avelã à minha massa para um sabor mais forte a nozes, mas claro que o óleo de macadâmia pode ser usado, se disponível, pois não é fácil de encontrar! Com uma massa estaladiça no topo, graças à adição de um streusel, e nozes crocantes no interior, é provável que todos saltem em cima deles!
Receita para cerca de dez muffins atómicos ou quinze muffins clássicos:
Massa de Streusel: -125g de farinha -90g de açúcar -90g de manteiga mole -1 colher de chá de canela -1/2 colher de chá de gengibre
Colar: -325g de farinha -1/2 colher de chá bicarbonato de sódio
-1 colher de chá fermento em pó
-125g de vergeoise castanha -125g de açúcar -125g de leite de ribot inteiro -125g de creme completo -30g de óleo de avelã (ou óleo de macadâmia, se disponível) -80g de óleo neutro -2 ovos grandes -1+1/2 colher de chá de baunilha líquida -140g de nozes de macadâmia
Pré-aquecer o forno a 190°C. Preparar a massa de streusel. Coloque todos os ingredientes na tigela de um processador de alimentos (caso contrário pode fazê-lo à mão): farinha, manteiga cortada em pedaços, açúcar, especiarias.
Usando o “k” do processador de alimentos, misturar a um pó fino. Caso contrário, terá de misturar à mão até obter uma mistura homogénea e pulverulenta.
Se desejar, pode continuar a misturar para obter uma massa que comece a juntar-se para um streusel mais espesso.
No entanto, esta massa mais pesada pode impedir que o muffin se levante. Mas provavelmente vamos usá-lo para outra receita!
Ponha de lado a massa de streusel.
Preparar a massa do muffin. Nada poderia ser mais fácil! Coloque os ingredientes secos numa tigela: farinha, açúcar, açúcar mascavado, sal, fermento em pó, bicarbonato.
Numa outra tigela, colocar os ovos, leite de ribot, natas, baunilha, óleo e óleo de avelã. Misturar bem.
Verter a mistura líquida sobre a mistura seca e misturar bem .
A massa está quase pronta!
Esmagar grosseiramente as nozes de macadâmia e adicioná-las à massa.
As latas de muffin (utilizando uma lata de spray é mais conveniente) sem excesso, depois colocar o papel no interior.
Encher os moldes com a massa e polvilhar com massa de streusel. No caso do “queque de coroa grande” metálico de Chicago (não sei onde comprá-lo em França, terá de o procurar no eBay!!!), pode enchê-lo a meio caminho com massa, polvilhar streusel no meio, adicionar mais massa e depois polvilhar novamente o streusel. Desta forma, haverá também massa de streusel no meio!
Cozer a 190°C durante 20 a 35 minutos. Tudo depende do tamanho dos muffins. Basta olhar para a cor e espetar uma faca para dentro e a lâmina sairá seca!
Aproveite enquanto ainda está quente com um grande latte quente quando está frio lá fora!
