É Maio e está frio, está a chover (pelo menos em Paris) e é muito feio. É preciso muita coragem para sair do edredão pela manhã. Apeteceu-me um pouco de conforto e tratei destes pequenos biscoitos meio cozidos com um centro de caramelo a pingar. Fiz várias tentativas para assegurar que o caramelo estava bem fechado na pastelaria sem interferir demasiado na sua cozedura. A propósito, para que funcione perfeitamente, preparo tudo no dia anterior: caramelo e massa de bolo. Faça-o repetidamente para alegrar o dia!
Receita para 5 mi-cuits de chocolate com um centro de caramelo salgado:
Toffee:
75g de açúcar
40g de xarope de glucose
1/2 colher de chá de sal
15g de água
50g de creme completo
Chocolate meio assado:
115g de manteiga com sal
100g de chocolate preto
2 ovos + 2 gemas
75g de açúcar de confeiteiro
50g de farinha
Pode (e deve) preparar tudo no dia anterior. Para o caramelo, deitar o xarope de glucose numa caçarola. Pode ter demasiado caramelo, mas não creio que isso seja um problema para si! ????
Adicionar o açúcar e o sal.
Verter na água e deixar ferver.
Tenha cuidado para não queimar demasiado o caramelo. Deve ser de cor âmbar.
Quando tiver uma cor agradável, deitar o creme inteiro fora do lume.
Misturar bem e deixar arrefecer à temperatura ambiente.
Também fazer a massa no dia anterior. Derreter a manteiga e o chocolate juntos.
Misturar os ovos, as gemas e o açúcar de confeiteiro numa tigela separada.
Bater para dissolver o açúcar, mas não trabalhar em excesso.
Verter o chocolate/manteiga derretida e misturar bem.
Acabar com a farinha. Depois arrefecer a massa durante a noite e colocar o caramelo no congelador.
No dia seguinte, lubrificar os seus moldes (moldes de alumínio). Eu utilizo o canelés deslizante, mas um spray de desmoldagem serve. Colocar a massa fria num saco de pastelaria com um bocal largo (15 ou 20mm). Colocar uma parte da massa no fundo.
O caramelo endureceu (é claro que está congelado). Escapar uma generosa quantidade de caramelo com uma colher.
Colocar este bolinho congelado no centro da massa fria.
Cobrir com a restante massa nos 5 moldes.
Cozer no forno a 190°C durante 17 minutos. A parte de cima deve começar a definir-se ligeiramente.
Pode esperar 5 minutos antes de se virar para um prato e assistir com espanto enquanto o caramelo sai do bolo…
