Tenho comido mlaouis (meloui no singular) há anos. Como devem saber, vou frequentemente a Marrocos e aprendo sempre muitas receitas deliciosas. O meloui é uma panqueca pequena e escamosa que é absolutamente divina e que pode ser encontrada na maior parte do Magrebe. Regado com mel ao pequeno-almoço ou como acompanhamento de uma tagine, o meloui é irresistível. Um grande obrigado a Miryem e Bouchra que aceitaram partilhar comigo os seus conhecimentos culinários (fiz-lhes um bolo de morango e um kouign amann). Fiz a receita no local, tirando fotos de Bouchra para os passos, mas rediz a receita na minha oficina para ter a certeza das proporções que tinha notado e sobretudo para a adaptar (uso sêmola fina de trigo duro, enquanto que em Marrocos é farinha de trigo duro, ainda mais fina).
A equipa pronta a cozinhar mlaouis e especialmente uma tagine de vegetais. Divertimo-nos imenso!
Ingredientes para 11 malouis:
160g de farinha T45
190g de sêmola fina de trigo duro
2,5g de levedura seca ou 8g de levedura fresca
4g de sal
200ml de água
Coloque a farinha num prato grande ou na tigela do seu processador de alimentos.
Verter a sêmola fina de trigo duro.
Colocar o fermento fresco ou seco no meio e o sal na lateral.
Verter a água (à temperatura ambiente) sobre a levedura para a dissolver.
Comece a amassar à mão ou com o gancho da sua KitchenAid.
É necessário lubrificar o cotovelo se se fizer tudo à mão. Mais fácil no robô!
Amassar durante 5 a 10 minutos.
Colocar um pedaço de película aderente (ou saco de plástico) em cima e sair durante 30 minutos.
Revestir a massa com um pouco de óleo e cortar em bolas de 50g. Aqui, uma técnica que também utilizo há algum tempo (desde 2011, quando fiz um curso de cozinha argelina), que Bouchra também utiliza (tal como todos os outros no Magrebe). É preciso beliscar uma bola com o polegar e o indicador e ela corta-se sozinha.
Plop!
E aí o tem! O plop e o lúpulo são muito importantes.
Fazer o mesmo para todos os bolinhos de batata.
Aplicar um pouco de óleo sobre a superfície e proteger com uma película. Deixar de pé por mais 10 a 15 minutos desta vez.
Prepare a sua superfície de trabalho. Colocar uma tigela com sêmola fina de trigo duro e uma tigela com metade de manteiga derretida e metade de óleo. É necessário um total de 150g.
Olear o poço da superfície de trabalho. Estenda uma bola de massa mergulhando os dedos na tigela de gordura. Deve ser espalhado o mais fino possível, evitando rasgar o mais possível.
Ainda usando os dedos, deitar um pouco de manteiga/óleo e um pouco de sêmola de trigo duro fino.
Dobrar ao meio.
Dobrar ao meio novamente no sentido do comprimento.
Depois começar a enrolar-se, dobrando-se pouco a pouco.
Ao puxar suavemente a massa, aumentar a pequena peça que falta dobrar.
Acabar de dobrar.
Em seguida, pressionar o lado aumentado para dentro no rolo resultante.
E é tudo!
Fazer o mesmo para todos os bolinhos de batata.
Para cozinhar. Pressionar o pequeno cilindro sobre a superfície de trabalho oleada.
Numa frigideira em fogo moderado, cozer os mlaouis de ambos os lados.
Devem estar bem douradas.
Pode guardá-los num pequeno saco num local fresco durante vários dias ou mesmo congelá-los. É melhor comê-los de imediato. Para os reaquecer simplesmente coloco-os na torradeira e polvilho-os generosamente com mel! Uma pequena bomba de paladar!
