A madeleine de Commercy é uma pequena maravilha que pode causar certos problemas. De facto, obter um bom caroço e ter uma saborosa madeleine que sai bem do molde pode tornar-se um mistério! Felizmente, testei tudo para si, passei por várias receitas até chegar a estas deliciosas madeleines!
Receita para 18-20 madeleines:
-2 ovos -1 gema de ovo -120g de farinha -100g de açúcar -100g de manteiga semi-salgada meia colher de chá de fermento em pó (1/8+1/4 colher americana) -escolha de: casca de limão, pó de baunilha, flor de laranjeira
Comece por colocar os dois ovos inteiros e a gema numa tigela com o açúcar. Nesta receita, escolhi as madeleinas com um ligeiro toque de limão . Normalmente não gosto de limão nas receitas , mas aqui tenho de admitir que estou a derreter completamente! Por isso, utilizo apenas metade do sabor de um pequeno limão não tratado.
Bata com um batedor manual para branquear ligeiramente a mistura, mas também não em demasia! Adicionar a levedura. Em seguida, adicionar a farinha em três adições, misturando bem. Sempre com o chicote!
Derreter a manteiga no microondas ou em banho-maria em . Adicioná-lo e misturar bem.
Depois deixar a massa descansar no frigorífico durante pelo menos 2 horas.
Tentei colocá-lo no frigorífico durante a noite, não mudou nada. Em seguida, preencher os moldes.
Por isso, tentei tudo! Moldes feitos de metal, alumínio revestido de teflon e finalmente flexipan. Experimentei-o sem gordura, com manteiga e farinha e com o meu spray de gordura. O veredicto? Bem, devo admitir que na minha receita de canelés, sou totalmente contra os moldes moles, preferindo os moldes duros, mas aqui com as madeleines o melhor é o flexipan. E de longe. E sem qualquer adição de gordura! Na fotografia abaixo pode ver-se que experimentei com manteiga e farinha e sem, bem sem o resultado é perfeito.
Os moldes que utilizei contêm uma forma de madeleína maior do que a média.
Para o enchimento dos moldes, se tiver pequenas madeleinas (não as mini! mas as pequenas, em comparação com este molde!), neste caso só deve encher o molde a meio caminho.
Se utilizar o mesmo molde com grandes madeleinas flexipan, então encha com uma boa colher de sopa, deixando uma margem de menos de 1 cm antes da borda.
Para a cozedura, experimentei também dois métodos de cozedura, um forte seguido de um mais suave. Bem, para esta receita não há necessidade disso! Cozi-os durante 13 minutos a 190°C.
Assim, pré-aqueça o forno a 190°C e no último segundo encha os moldes colocados num tabuleiro, depois asse durante 13 minutos.
E aqui estão as madeleines com belos solavancos! Garanto que passei algum tempo nas madeleines, não querendo ser adiado por uns pastéis tão simples ! Tentei uma multidão de receitas para finalmente chegar a esta. A diferença é esta pequena gema de ovo e os mexilhões! Esta receita é uma garantia de sucesso!
