Bebé holandês com mirtilos e ricotta de limão

Acabei de regressar de uma viagem e trouxe de volta uma série de ideias de receitas na minha mala. Estive em Seattle pela terceira vez na minha vida e só agora estou a descobrir os bebés holandeses! É uma espécie de panqueca grossa, cozinhada primeiro numa panela e depois no forno. Fui ao Tilikum Place Café em Seattle, que é conhecido por servir o melhor bebé holandês. Aqui está uma versão com mirtilos e ricotta de limão. Não há açúcar na massa, por isso terá de adoçá-la no final com um pouco de açúcar de confeiteiro, mas sobretudo polvilhe com xarope de bordo! Um verdadeiro deleite! O nome vem provavelmente da deformação de 'deutsch ' que significa alemão em alemão, e é pronunciado quase da mesma forma que 'holandês ' que significa holandês. Mas é provável que provenha originalmente de panquecas alemãs, o pfannkuchen . Também se pode pensar no Far Breton (a minha receita AQUI), mas eu prefiro manter as coisas separadas!

Estou a ficar um pouco à frente da época, mas deparei-me com courgettes na secção orgânica do meu mercado local. Tive de repente um desejo de apanhar sol no meu prato! Adoro a mistura de courgette e damasco, por isso quis fazer uma torta saborosa com ela. Com endro e parmesão, esta é uma fatia deliciosa que pode acompanhar com uma salada verde.
