  • Para a massa doce, prepare a receita conforme explicado nesta página AQUI!
  • Prepare o pistache em seu interior. Basta misturar todos os ingredientes em um recipiente.
  • O mesmo vale para a massa de bolo! Basta derreter a manteiga e adicionar o restante dos ingredientes. Para medir o peso do ovo, quebre 3 ovos em uma tigela e bata para formar uma omelete, depois pese os 130g.
  • Espalhe um pedaço de massa doce em uma superfície enfarinhada, com cerca de 2 mm de espessura, e coloque-o em uma forma de 20 cm (forrada com papel vegetal cortado no tamanho certo). Corte a massa em um disco.
  • Coloque o disco de massa sobre o papel vegetal no fundo da forma.
  • Despeje cerca de metade da massa do bolo e espalhe bem.
  • Para o pistache no interior, é mais fácil usar um saco de confeitar, mesmo que o resultado seja feio, pois tudo ficará coberto!
  • Em seguida, espalhe um pouco mais com uma colher, para chegar mais perto da borda.
  • Despeje a outra metade da massa, alisando-a uniformemente. Polvilhe com amêndoas cortadas em fatias.
  • Asse por 1 hora em um forno pré-aquecido a 165°C em calor estático (também conhecido como forno tradicional), que não seja um forno de convecção. Se você ligar o fogo, o bolo inchará com uma protuberância no meio, enquanto que com o calor estático, o bolo inchará uniformemente em toda a superfície.
  • Quando sair do forno, deixe o bolo esfriar por uma boa hora. Desenforme o bolo e coloque-o em uma grade. Eu uso uma cobertura neutra com um pincel, mas você também pode usar geleia de damasco aquecida.
