Começo com o yudane, para aqueles pãezinhos de cachorro-quente. Também se poderia fazer hambúrgueres redondos. A textura resultante é fantástica e uma mudança radical de uma massa feita sem o yudano. Então o que é yudane? Esta é uma parte da farinha que é misturada com água a ferver. Esta massa macia e plástica é então adicionada à massa, o que se torna então incrível. Porquê? Isto porque o yudan reteve a água e provocou a gelatinização do amido na farinha. Tem de tentar acreditar nisso!
