Hambúrguer com foie gras, creme de porco e cebola caramelizada

As pessoas perguntam-me frequentemente se eu gosto de hambúrgueres. Não, eu não gosto deles, eu amo-os! Mas depois um hambúrguer muito bom, com o pãozinho caseiro. Ou num restaurante onde tudo é feito no local. Eu tinha colocado uma receita mais clássica de hambúrguer no meu livro 'Le Grain de Sel' e uma receita vegana em 'Végéterrien'. Comi um hambúrguer de foie gras em Périgueux e queria fazer alguns para os amigos antes do fim do Inverno. O resultado é um pouco demoníaco e permanece no reino do excepcional. Não o vou fazer sempre, porque é decadente mas totalmente delicioso. O hambúrguer é suficiente em si mesmo, sem batatas fritas na lateral, uma boa salada se necessário, mas acima de tudo um bom copo de vinho tinto. A combinação de cebolas caramelizadas, natas de cogumelos cepes, foie gras frito e bife cozido da maneira que eu gosto é totalmente irresistível...
