  • Comece lavando as abobrinhas e cortando as pontas. Corte-os ao meio no sentido do comprimento.
  • Coloque em um prato refratário. Acrescente toda a cabeça de alho. Regue generosamente com óleo e tempere com sal e pimenta.
  • Asse no forno a 220°C (ventilado) por 1 hora e 10 minutos.
  • Deixe esfriar, pese as abobrinhas cozidas e coloque-as, juntamente com o suco que possam ter liberado, em um liquidificador pequeno com os dentes de alho assados.
  • Pese 10% do peso das abobrinhas no tahine e no creme de gergelim. Tempere com sal e pimenta, um pouco de azeite de oliva (1 colher de sopa) e as folhas de dez ou mais ramos de hortelã.
  • Será muito, mas será fresco e delicioso!
  • Misture até obter um creme homogêneo que não seja muito liso.
  • Para a última abobrinha, corte-a longitudinalmente em tiras finas, o que é melhor feito com um mandolim.
  • Despeje em uma tigela e adicione as raspas de meio a um limão inteiro. Tempere com sal e azeite de oliva.
  • Deixe marinar na geladeira por pelo menos uma hora. Você pode colocar tudo em filme plástico em um local fresco.
  • Pouco antes de servir, coloque o caviar de abobrinha em um prato, adicione as fatias de abobrinha marinadas e regue com azeite de oliva. Para obter um óleo de clorofila com sabor de menta, acesse AQUI!
