  • Coloque as avelãs cruas inteiras em um prato refratário e faça o mesmo com a avelã em pó.
  • Coloque no forno a 170°C por uns bons trinta minutos. O pó de avelã precisa ser mexido com bastante regularidade para que a torrefação seja uniforme. No final, o pó adquire uma linda cor de caramelo.
  • No caso das avelãs inteiras, a casca deve rachar e elas devem estar bem douradas. Despeje o pó de avelã torrada, o açúcar mascavo, a farinha, o fermento e o sal em uma tigela. Misture bem.
  • Despeje os 180 g de clara de ovo (para isso, junte as claras de 5 ou mais ovos e pese a quantidade necessária). Misture novamente. A massa deve ficar lisa.
  • Despeje em uma forma, forre a base com papel vegetal e unte a borda interna. Despeje sobre a massa e, em seguida, polvilhe os pedaços de avelã torrada esmagada por cima.
  • Cozinhe por 40 minutos a 155°C em fogo estático (não assistido por ventilador) e, em seguida, reduza a temperatura para 120°C com a função de vapor, se você tiver essa opção, e cozinhe por mais 30 minutos. Sem a função de vapor, abaixe a temperatura para 120°C colocando uma panela com água fervente no fundo do forno e cozinhe por 30 minutos.
